Paneer Peda





Ingredients:

Paneer grated - 1/2cup
Milk powder - 1/2cup
Powdered sugar - 1/2cup
Ghee - 2tsp
Cardamom powder - 1/2tsp



Preparation:

1)Heat a kadai, add ghee, grated paneer,milk powder,cardamom powder and sugar, mix them well and stir continously until the mixture starts to separate. 

2)Make it to dough form and off the flame.

3)Then make the dough into small patties or balls. 









Cake Pauk


Ingredients:

Maida  - 1cup

Sugar - 2cups

Water - 1/2cup

Butter - 2tsp

Cardamom - 2nos

Ghee - 4tsp

Orange essence - few drops

Preparation:

1)Heat a pan, add maida and butter fry until the flour turns light brown and keep aside

2)Heat another kadai, pour water boil it and add sugar till it becomes one thread consistency(thick syrup)

3)Add maida, ghee(3tsp), essence and cardamom and stir well until it becomes thick paste and nonsticky

4)Spread one tsp of ghee in a tray and pour the above paste into it

5) Allow it to cool for 1/2hr and cut it into desired shape

6)Decorate with cashwnets as topping

Mysore Pak



Ingredients:

Bengal gram flour - 1cup

Sugar - 2cups

Ghee - 1 cup

Water - 1/2cup

Cardamom powder - 1tsp

Preparation:

1)Heat a kadai, add 1tsp Ghee and flour, fry till raw smell goes and turns light brown & keep aside

2)Heat the Ghee in a low flame continously.(dont off the flame)

3)In another flame, heat heavy bottomed vessel, add water and sugar heat till it becomes thick (string consistancy) 

4)Add the flour slowly into the sugar syrup mix well continously so that no lumps are formed

5) Add the ghee little by little, stir well..when it becomes thick

6)Grease the plate with ghee and pour into it the mix, when it cools cut them into desired shapes.

 

Kozhukatta/Steamed Rice Ball



Ingredients:
Rice flour - 1cup
Hot water - 1cup

Salt - to taste
For stuffing :

Gratted Coconut - 1/2cup
Sugar - 6-7tsp
Cardomom powder - 1/2tsp

Preparation:

1) In a bowl, add coconout, sugar and cardomom powder mix them well and keep aside

2) In another bowl, put rice flour, salt and add hot water little by little and make a soft dough

3) Make small balls with a hole and keep the coconut stuffing inside the balls and close it

4) Steam them in idli plates for 10-15mins. Hot kozhukatta is ready to serve.

Jackfruit Appam/Chakka Unniappam


Ingredients:

Raw rice - 1cup

Jackfruit/Chakka - 3pieces

Jaggery - 1/2cup (as required)

Cardomom powder - 1/2tsp


Preparation:

1) Soak the rice for 4-5 hrs. Grind them with jackfruit into fine batter(* its should be in idly batter consistency) or can also use 1 cup of rice flour instead of rice 

2)Add the jaggery in little water and  heat them till it melts

3)Filter them and add it to the batter

3)Keep the batter for 4-5hrs. Then heat a unniappam/Panniyaram kadai, add 1/4 tsp oil in the hole and add the batter. Fry till brown colour.

* If the batter is too watery, can add little maida/rice flour for thick consistency

   

   


Rose Ada Prathaman

   

       Rose ada payasam is very simple n tasty payasam....this payasam is nothing but ada prathaman...for a change i have added rose syrup, that give nice smell and taste too. I specially prepared this for my hubby for our 5th year anniversary.

Beetroot Halwa



Ingredients:

Gratted beetroot - 2 Cups

Milk - 1 Cup

Sugar 1 1/2 Cup

Ghee - 2 tsp 

Cardamom Powder - 1/2 tsp 

Chopped Cashewnuts - 2tsp



Preparation

1. Add milk in a pan and heat it till the milk gets thicker

2. To this, add grated beetroot and boil it till the beetroot absorbs all the moisture from milk. Add sugar and keep stirring in a medium heat.

3. When complete moisture is absorbed, add 2 spoons of ghee. Fry for two more minutes and remove from heat.

4. Fry the cashewnuts in the remaining ghee and add it to the halwa with the cardamom powder. Mix well.

Milk/Pal Kova


Ingredients:

Milk - 1 litre

Sugar - 1 1/2 cups (as reqiured)

Cardamom powder - 1tsp

Ghee - 5-6tsp

Preparation:

1)Heat a heavy bottom vessel or pressure cooker, add milk bring to boil and cook till it reduce thick & half (stir inbetween)

2)Add ghee, cardamom powder and sugar, stir continuously...when it comes to very thick consistency, off the flame. Serve after it cool.

Pal kova is ready to serve. 


Rava kesari




Ingredients:

1) Rava- 1 Cup

2) Water - 2 cups

3) Sugar - 2 cups

4) cashewnets - 1 Table spoon

5) Dry grapes - 1 Table spoon

6) Cardamom - 3 nos

7) Ghee - 5 Table spoon

8) Kesari powder - a pinch

Preparation:

1) Heat rava in a pan till  it turns light brown

2) Then in a pan add 2 cups of water and allow them to boil

3) Add the rava into the water close the pan lid for 5 mins until the rava absorbs the water

4) Add sugar and stir well

5) Then add ghee, kesari powder and cardamom

6) Cashewnets and dry grapes - fry it in a Tspoon of ghee and add it to the kesari

Carrot Halwa



Ingredients

Gratted Carrot - 2 Cups

Milk - 1 Cup

Sugar 1 1/2 Cup

Ghee - 2 tablespoons

Cardamom Powder - 1/2 tsp

Chopped Cashewnuts - 2 tsp

Preparation

1.     Add milk in a pan and heat it till the milk gets thicker

2.     To this, add grated carrot and boil it till the carrot absorbs all the moisture from milk.Add sugar and keep stirring in a medium heat.

3.     When complete moisture is absorbed, add 2 spoons of ghee. Fry for two more minutes and remove from heat.

4.     Fry the cashewnuts in the remaining ghee and add it to the halwa with the cardamom powder. Mix well.

Gulab Jamun



Ingredients:

Instant gulab jamun mix flour- 2cups
Water - 1/2 cup
Sugar - 4cups
Cardamom - 2nos
Oil/Ghee - for deep frying

Preparation:

1)Take a thick bottom vessel, add sugar(4cups) and water( 1/2cup) bring it to boil. When it becomes thick syrup, add cardamom and off the flame
2) Take a bowl put instant gulab jamun mix flour into it..add Water little by little (1/2cup)
3) Mix them smoothly and make small balls without applying much force
4)Heat a kadai, add ghee/oil..then fry the balls till it turns brown in a low flame
5)Put the fried balls into sugar syrup


Instant gulab jamun is ready to eat, serve it with ice cream.


Unniappam


Ingredients:

Rice Flour - 1cup

Jaggery - 1/2cup (as required)

Banana - 2nos

Banking soda - a pinch

Cardmom powder - 1tsp

Preparation:

1)Melt the jaggery and grind the bananas 

2)In another bowl, add rice flour, melted jaggery,cardamom powder and banana paste and make a batter

3)Keep the batter for 5-6hours

4)Then heat a unniappam pan and add oil to each hole...when it boils, pour the batter into the holes and cook till it becomes brown both the sides

Ada prathaman - II


Ingredients:

Milk - 4 cups

Rice Ada - 1cup

Sugar - 1 1/2cup

Condensed milk - 3tsp

Cashewnets -5-6nos

Ghee - 1tsp

Preparation:

1)Heat ghee in a pan and add cashewnets, fry them till brown and keep aside

2)Heat a heavy bottomed vessel, add milk and ada..boil them till it becomes soft 

3)Then add sugar and keep in flow flame and keep stirring

4)when it become thick, add condensed milk and cashewnets

 Ada prathaman is ready to serve.

Coconut Burfi


Ingredients:

Coconut gratted - 1cup

Sugar - 1 cup

Ghee - 2tsp

Cardamom - 1no

Cashwnuts - for garnishing

Preparation:

1)Heat a kadai, add ghee and coconut fry for 3-4mins and keep aside

2)Heat a heavy bottom vessel,add sugar and 1/2 a cup of water make a thick syrup

3)Then add coconut and keep stirring till it becomes thick and finally add cardamom

4)In a plate spread little ghee and pour the coconut and after it cools, cut them into shapes


Rice Kheer


Ingredients:

Milk - 5 cups

Basamathi rice - 1/4cup

Sugar - 3/4cup

Cashewnets -8-10nos

Preparation:

1)Boil milk in heavy bottomed pan  

2)Add basamathi rice, cashews and boil till it cooks and turns thick

3)Then add sugar and keep in a medium flame and stir inbetween

4)Cook till sugar dissolves well

Rice kheer is ready to hot or cold



Semiya kesari(Vermicelli)


Ingredients:

Vermecilli / Semiya - 1 cup

Sugar - 1 cup

Ghee - 2 tsp

Water - 2 cups

Cardomom powder - 1/4 tsp

Cashew nuts - 5 nos

Kesari colour - a pinch

Preparation:

1)In a pan, heat ghee and roast the cashew nuts remove it and keep aside.

2)Roast the semiya till it turns brown and keep it aside.

3)In the same pan, Pour 2cups of water and bring it to boil. Add the Vermecilli and cook  till it absorbs water.

4)Then add the sugar, kesari colour, cardomom powder and sim for 10mins.

5)Finally garnish it with cashew nuts.

Pineapple Halwa


Ingredients:

Pineapple - 1no

Ghee - 3-4tsp

Sugar - 1/2cup

Milk - 1 glass

Water - 1/2cup

Cardammom (powdered) - 2 nos

Cashewnets - as required

Preparation:

1)Chop the pineapple and grind them into paste and keep aside

2)Heat a kadai, add water and bring it to boil then add grinded pineapple paste saute and cook till pineapple absorbs water

3)Then add milk and boil...stir till it becomes thick

4)Add sugar and keep stirring in a medium heat 

4)Finally add ghee, cardamom powder  and cashewnets 

Sweet and hot halwa is ready.


Rava Urunda


Ingredients:

Rava - 1 cup

Sugar - 1 1/2cup

Milk - 3/4cup

Coconut gratted - 1/2cup

Cardamon powder - 1tsp

Cashwnets - 6-7nos

Ghee - 2tsp

Preparation:

1)Heat a kadai (better non-stick kadai), add rawa & fry them till it turns light brown and nice aroma starts, then transfer them to another bowl and keep aside

2)In the same kadai, add 1-2tsp ghee, gratted coconut fry till it turns light brown 

3) Add rawa to it and mix well

4)Then add sugar,(adjust to ur taste) fry for 3-4mins, cashwnets, cardamon powder and then add warm milk to the rava

5)Off the flame, when the mixture is warm, press them into small balls

Rava urunda is ready to serve.
