Snakegourd Stir fry/Padavalanga thoran/Podalanga poriyal




Ingredients:

Snakegourd - 1- 2nos (medium size)

Channa dal/Kadalaiparuppu - 1/4cup

Red chilly - 2nos

Gratted coconut - 3tsp

Mustard seeds - 1tsp

shallots - 3-4nos(chopped)(optional)

Oil - 1tsp

Tumeric powder - a pinch

Curry leaves - few



Preparation:

1)Soak the chanadal for 15-20mins. After 20mins in a vessels, add the snakegourd(cut into cubes), channa dal, salt, tumeric powder, little water and cook them till it turns soft

2)Heat a kadai, add oil,mustard seeds after splutters, shallots saute for few mins, then add red chilly, curry leaves,cooked snakegourd and  finally add coconut cook for 2-3mins

3)Stir fry is ready to serve. Goes well with rice.

Chilly paneer


Ingredients:

Paneer (cut into small pieces) - 250gms

Capsicum - 1no

Onion - 1no

Green chilly - 2nos

Ginger&garlic paste- 1tsp

Soya sauce - 1tsp

Chilly sauce or tomato sauce - 1tsp

Salt - to taste

Oil - 3tsp

Preparation:

1)Heat oil in a pan and add paneer cubes , fry them it turns light brown, drain and keep aside

2)To that same add onion saute them for few mins

3)Then add green chillies and ginger&garlic paste fry them till the raw smell goes

4)Add capsicum and salt saute and cook for 5mins...then add soya and chilly or tomato sauce.

5)Finally add the fried paneer cubes and mix them well.

Goes well with: Fried rice, chapathi and naan

Yellow pumpkin kuttu



Ingredients:

Yellow pumpkin - 250 grams

Bengalgram dal - 1/2cup

Coconut gratted - 1/2cup

Cumin seeds - 1tsp

Mustard seeds - 1tsp

Onion - 1no

Tomato - 1no

Garlic flakes - 2nos

Green chilly - 3nos

Red chilly - 1no

Coriander & curry leaves

Oil - 2tsp

Salt - to taste

Preparation:

1)Pressure cook the yellow pumkin, bengalgram dal, onion, tomato, curry leaves, green chillies,  garlic flakes and keep aside

2)Grind the gratted coconut and cumin into fine paste then add the coconut paste into the pressure cooked ingredients and heat them for 10mins.

3)For seasoning, heat oil in a pan splutter mustard seeds and red chilly and add to the pumpkin gravy

4) Garnish with coriander leaves

Goes well with: Rice and chapathi

Brinjal fry


Ingredients:

Brinjal - 250 grms

Onion - 1no

Garlic flakes - 3 to 4 nos

Curry leaves

Oil - 3tsp

Red chilly powder - 1tsp

Tumeric powder - a pinch

Salt - to taste

Preparation:

1) Heat oil in a pan, temper mustard seeds 

2) Add curry leaves, onion and garlic flakes fry till it turns brown

3)Then add brinjal and salt saute them and allow it to cook 

4)After it becomes soft then add red chilly powder and fry for 15mins

Goes well with: Rice and chapathi

Chickpeas Sundal


Ingredients:

Chickpeas (Black) - 1cup

Gratted Coconut - 2tsp

Mustard Seeds - 1tsp

Hing - 1/4tsp

Oil - 2tsp

Salt - to taste

Curry leaves - few



Preparation:

1)Soak the Chickpeas overnight & nextday pressure cook with salt and keep aside

2)Heat a kadai, add oil, mustard seeds after splutters, add curry leaves and hing

3)Add chickpeas and cook them for 2-3mins, finally add gratted coconut and saute for few mins

Chickpeas sundal is ready to serve.




Im Backkkkkk!!! with Okra Masala



Ingredients:

Okra/lady's finger/vendakka - 25o grms

Onion - 2nos

Tomato - 2nos

Ginger n garlic paste - 1tsp

Fennel seeds -1/4tsp

Red chilly powder - 1tsp

Coriander powder - 1/2tsp

Tumeric powder - 1/4tsp

Cumin powder - 1/2tsp

Garam masala - 1/2tsp

Oil - 3tsp

Salt - to taste


Preparation:

1. Heat a kadai, add 1tsp oil and add cutted okra and fry till colour changes,drain and keep aside

2. In the same kadai, add 2tsp oil, chopped onion, fennel seeds, ginger n garlic paste saute them for 2-3mins

3. Add tomato and salt. cook till it mashes well

4. Add tumeric,chilly, coriander and cumin powder mix it and cook till oil separates and off the flame n keep aside 

5. Then add okra with little water and cook till the okra and masala mix together

This masala goes well with chapathi and naan



Channa masala


Ingredients:

1)Channa Dal - 1 cup (soak them for 8 hours in  water)

2)Onion - 2nos (chopped)

3)Tomato - 2nos (chopped)

4)Ginger& garlic paste - 1 Tspoon

5)cloves - 2nos

6)Pattai - small piece

7)Channa masala powder or garam masala powder - 1 Tspoon

8)Chilli powder - 1/2 Tspoon

9)Coriander powder - 1/2 Tspoon

10)oil - 2 Tspoon

11)Coriander leaves

12)Salt - to taste

Preparation:

1)Boil the soaked channa dal 20 mins and keep aside

2)Heat oil in a pan, add onions, cloves and pattai fry them for 3mins

3)Add ginger and garlic paste fry them till the raw smell goes

4)Then add tomatoes and salt. Heat until the oil separates

5)Add channa dal and 1/2 cup of water allow them to boil, then add chilli powder,coriander powder and channa masala or garam masala powder boil for 5mins

6)when it becomes thick gravy..garnish with coriander leaves

Goes well with: Chapathi, naan, puri, bread and dosa

Keerai (greens) kuttu



Ingredients:

1)Any greens (Keerai) - 1 cup

2)coconut gratted - 1/2 cup

3)cumin (jeera) - 1 Tspoon

4)Red chilly - 2 nos

5)Green chilly - 3nos

6)Dal(pacha parupu) - 1/2 cup

7)Curry leaves

8)Oil - 1 Tspoon

9)Onion - 1no.

10)Tamato - 1no.

11)Garlic - 2 piece

To Grind:

Coconut gratted

Jeera (cumin seeds)

Grind all the above ingredients to a fine paste. 

Preparation:

1)In a pressure cooker put the greens(Keerai), garlic, onion, tamato, dal and salt.

2)Pressure cook above the ingredients untill the two whistle.

3)Heat oil in a pan, add mustard seeds, curry leaves and red chillies fry them and add it to the cooked green(keerai) .

Goes well with: Rice and Chapathi.

Green banana fry




Ingredients:

1)Green banana - 2 medium size (chopped into small pieces)

2) Onion - 2nos

3) Green chilly - 4 nos

4) Ginger - small piece

5) Garlic - 3 piece

6) Curry and coranider leaves

7) Oil - 3 spoons

8) Mustard seeds - 1 spoons

Preparation:

1) Heat oil in a pan, add mustard seeds and onions fry for 3mins. 

2) Then add ginger, garlic and green chillies fry them until the raw smell goes

3) Add green banana and salt..close the pan and heat it for 15mins..till the green banana cooks well

4) Fry until it absorbs the moisture

5) Finally add curry and coriander leaves

Goes well with: rasam, sambar and curd rice




Baby Potato Masala


Ingredients:

Baby potatoes - 1/2kg

Onion - 2 nos

Tomato - 2nos

Red chilly/Kashmir red chilly powder - 1tsp

Garam masala - 1/2tsp

Green chilly - 2nos

Ginger & garlic paste - 1tsp

Cumin seeds - 1tsp

Fennel seeds - 1tsp

Oil - 2tsp

Curd - 1tsp

Salt - to taste

Preparation:

1)Heat a kadai, add oil, cumin, fennel seeds, onions  and ginger & garlic paste saute till raw smell goes well

2)Then add tomatoes, green chilly(sliced two halves) and salt cook them till it mash well

3)Add chilly powder, garam masala, curd  fry them till oil separates

4)Finally add boiled potatoes and mix them well , cook for 4-5mins

5)Garnish with coriander leaves

Goes well with chapathi, naan and pori.


Ennai Kathirikkai Stuffed




Ingredients

1) Brinjal small 10 nos. - 300 gms 

2) Bengal gram dhal - 3 tsp 

3) Black gram dhal - 2 tsp 

4) Dry chillies - 6 

5) Coriander - 3 tsp 

6) Garlic – 1 no.

7) Asafoetida powder - 1/2 tsp 

8) Salt 

9)Oil - 5 tsp 

Preparation:

1) Slit the brinjal into 4 with out separating the pieces and with the stalk on.

2) In a little oil fry the different dhals, coriander and chillies , garlic,powder well and add the asafoetida also.

3) Mix a little salt and oil inside the cut sides of the brinjal and fry it in the pan for ten minutes till the brinjal becomes tender.

4) Let the brinjal cool for 5 minutes.

5) Then fill the inside of the brinjal with the paste.

6)Heat the remaining oil, put the filled brinjal and carefully saute well till brinjal becomes very tender.

Goes well with:  Rice, chapathi.

Mutter Paneer



Ingredients:

1) Paneer - 1 cup

2) Peas - 1 cup

3) Tomato - 2 nos

4) Onion - 3 nos

5) Cloves - 3 nos

6) Ginger & Garlic paste- 1 Table spoon

7) Cashewnets powder - 1Table spoon

8) Milk - 2 Table spoon

9) Chilli powder - 1 Table spoon

10) Patta - 1 piece

To Grind:

     Fry 2 Onions and Tomatoes in a pan and grind them in a paste form. 

Preparation:

1) Heat oil in a pan add cloves, Cardamom, chopped onions fry them for 3mins

2)  Add the onion and tomato paste heat until the oil separates

3) Then add cashewnets  powder and  milk

4) Finally add the fried paneer and peas 

5) Garnish with coriander leaves

Geos well with: Chapathi, naan, paratha and fried rice

Gobi manchurian and An Award Time!


Ingredients:

Cauliflour - 1 no

Maida/All purpose flour -1/2cup

Corn flour - 2tsp

Chilly powder - 1/2tsp

Onion -2nos(sliced thinly)

Capsicum - 1 no

Ginger & garlic - 1tsp (sliced thinly)

Green chilly - 2nos

Chilly sauce - 1tsp

Soya sauce - 1tsp

Spring onion - 2tsp(chopped)

Oil - to fry

Salt - to taste

Preparation:

1)Heat 2-3cups of water,bring it to boiling and add cauliflour for 5-6mins..off the flame,drain the water & keep aside

2)In a bowl, add maida/all purpose flour, chilly powder, salt and add required water, make a thick batter. Dip the cauliflour piece into the batter and deep fry them till golden brown and keep aside

3)In the same kadai,drain excess oil and add 2-3tsp of oil, onion, green chilly(cut into halves), ginger & garlic, capsicum saute them 3-4mins

4)Then add chilly sauce, soya sauce and salt saute them for a while. Mix the cornflour into 1/2 glass of water and add it to the mixture, and bring it to boil and thick.

5)Add the cauliflour , mix them well and finally garnish with spring onion

Gobi manchurian is ready to serve and goes well with fried rice and chapathi.

Pineapple Pachadi


Ingredients:

Pineapple - 1cup(chopped finely)

Thick curd - 1/2cup

Gratted Coconut - 1/2cup

Tumeric powder - 1tsp

Green chilly - 2nos

Red chilly - 2nos

Cumin seeds - 1tsp

Mustard seeds -1tsp

Curry leaves - few

Coconut oil - 2tsp

Salt - to taste

Preparation:

1)Grind the gratted coconut and cumin seeds into fine paste and keep aside

2)Heat a pan, add pineapple,green chillies(cut into two halves),tumeric powder,salt and add required water, and cook till it becomes soft

3)Then add coconut paste, boil them for 4-5mins, Off the flame and add curd stir well

4)Heat a kadai, add coconut oil, mustard, red chillies and curry leaves and add to the pachadi

Pineapple pachadi is ready to serve. 



Vermicelli payasam/samiya payasam



Ingredients:

Vermicelli - 1cup

Boiled milk - 2cups

Sugar - 1 1/2cups

Condensed milk - 4-5tsp (optional)

Ghee - 1tsp

Cashewnuts - 4-5nos

Cardamom powder - 1tsp

Preparation:

1)Heat a kadai, add 1tsp ghee and add cashewnuts saute for few mins and keep aside

2)In the kadai, add vermicelli fry till it turns light brown 

3)Heat a heavy bottomed vessel, add vermicelli and  required water, cook them till it becomes soft

4)Then add sugar and condensed milk boil till sugar dissolves and turns thick 

5)When it cools, add boiled milk, cardamom and cashewnuts

Payasam is ready to serve.




Baby Potato Fry and An Award!


Ingredients:

Baby potato - 1/2kg

Onion - 1no

Curry leaves - 5-6nos

Chilly powder - 1tsp

Coriander powder - 2tsp

Garam masala powder - 1/2tsp

Tumeric powder - 1/2tsp

Fennel seeds - 1/2tsp

Garlic flakes - 6-7nos(optional)

Oil - 3tsp

Salt - to taste

Preparation:

1)Boil the potatoes, peel the skin and keep aside

2)Heat a kadai, add oil,fennel seeds, onion and curry leaves..fry for 2mins

3)Then add potaotes, all  the three powders and adjust salt

4)Mix them well and fry till oil separates

Baby potato fry is ready to serve with curd rice and chapathi..

Vandakka/Okra stir fry


Ingredients:

Vandakka/okra - 1/2kg

Small onion - 6-7nos

Green chilly - 3nos

Mustard seeds - 1tsp

Urad dal - 1/2tsp

Curry leaves - 3-4nos

Oil - 2tsp

Salt - to taste

Preparation:

1)Wash & drain vandakka on a towel and slice them thinly.

2)Heat a kadai,oil,mustard,urad, curry leaves, onion and green chilly....saute till it turns light brown

3)Then add vandakka and salt mix them well, keep stirring till oil separates 

*if vandakka is sticky, add 1/2tsp of curd while frying

Vandakka fry is ready to serve with rice and chapathi.


Potato Saagu


Ingredients:

Boiled potatoes - 4nos

Tomato chopped - 2nos(Medium size)

Bengal gram flour - 2tsp

Cumin seeds - 1tsp

Mustard seeds - 1tsp

Asafoetia (hing) - a pinch

Red chilly powder - 1tsp

Tumeric powder - 1/2tsp

Garam masala - 1/2tsp (if required)

Lime juice - 1/2tsp

Water - 1glass

Oil - 2tsp

Salt - to taste

Coriander leaves - to garnish

Preparation:

1)Heat oil in a kadai, add mustard seeds, cumin seeds and hing

2)Add chopped tomatoes, salt,red chilly powder, garam masala and tumeric powder fry them till oil separates

3) Then add boiled potatoes and mix the bengalgram flour  with water and add it to. Cook them for 5-6 mins.

4)When it becomes thick, off the flame and add the lime juice

5)Finally garnish with coriander leaves

Goes well with: Chapathi, naan and dosa

Babycorn Capsicum Masala


Ingredients:

Baby corn - 5-6nos(chopped thinly)

Capsicum - 1no 

Onion - 2nos

Tomato - 1no

Ginger & garlic - 1tsp

Cumin seeds -1/2tsp

Fennel seeds -1/2tsp

Cloves - 2nos

Chilly powder - 1tsp(as required)

Coriander powder - 1/2tsp

Tumeric powder - 1/2tsp

Oil - 2tsp

Salt - to taste

Coriander leaves - to garnish

Preparation:

1)Heat a kadai, add oil, cumin and fennel seeds, after it splutter, add onion saute for few mins, then add ginger & garlic paste fry till raw smell goes well

2)Then add tomato fry till oil separates

3)Add chopped baby corn,chilly,coriander,tumeric powder and salt, mix them well and close the lid and cook till it tuns soft

4)Finally add capsicum and cook for 3-4mins and add coriander leaves

Babycorn capsicum masala is ready to serve with chapathi and fried rice.


Vendaka( okra) Pachadi



Ingredients:

Vendaka (okra) - 250 grams

Shallots - 4-5nos

Cumin seeds - 1/2tsp

Red chilly - 2 nos

Curd - 1/2 cup

Curry leaves - few 

Oil - 2tsp

Mustard seeds - 1tsp

Salt - to taste

Preparation:

1)Heat a kadai, add oil, cumin seeds, and chopped onion saute them for few mins

2)Add finely chopped Vendaka with salt fry till becomes soft and off the flame 

3)Whisk the curd with salt and add it to the vendaka and mix them well

4)Again heat a kadai, add oil, splutter mustard seeds,curryleaves and red chilly,add it to the vendaka

vendaka pachadi is ready to serve..Goes well with sambar rice and rasam rice.
