M missing my school days where we used to celebrate Christmas….. Sing Carols , decorate cribs ….have competitions Nd more of all m missing those sweets nd savories, cakes nd cookies frenz used to get ……… Awww I loved them …. Thanks to all who brought them and had fun together :).

Here is todays recipe which was there in my draft for pretty long time… I thought this wud be the right time to post a cake……

Here goes the recipe for Orange and Coconut Marble Cake….

I tried this out myself without following ne blog… just made it like the Marble cake.



We need



All purpose flour – 2 cups

Eggs – 3 ( instead of baking powder nd baking soda)

Orange Essence – 1 tsp

Orange Juice – 1/4th cup,

Water – ½ cup

Coconut milk – 1/4th cup

Butter – ½ cup

Powdered Sugar – 2 cup

Desiccated Coconut – 4-5 tbsp



Method:

Preheat oven for 375* F.

Cream butter until fluffy add eggs one by one and beat for 5 minutes on medium speed until fluffy.

Add powdered sugar and mix well.

Now add flour lil by lil and without forming lumps, water and beat for 5 minutes.

Now divide the batter into two equal portions and to one portion add orange juice and mix well.

For the other portion add coconut milk(shudn be much thick), desiccated coconut and mix well

Grease a round baking tin and pour the orange batter first and then the coconut batter and repeat the same until done … take a tooth pick nd just move it in the mixture….. and bake for 35 – 40 min or until toothpick inserted comes out clean.

Cool the cake for a while nd place it on a wire rack.

Cut into pieces.

Orange Coconut Marble Cake is ready to Serve.

Celebrate This Deepavali With Some Sweet - Kuch Meetha Ho jaye

Its just a 4 days for Deepavali… and m sure all are busy preparing sweets and savories for this Deepavali…. I m posting the wishes and a sweet today itself as I may not be able to blog for some time.

Deepavali is the festival of Lights. The word 'Deepavali' is made up of two simple words. 'Deepa' means light and 'Avali' means a row. Hence 'Deepavali' means a row of lights. The festival is associated with many legends and beliefs. One of them is to commemorate the killing of Narakasura, a notorious demon, by Lord Krishna.  Narakasura, because of his previous store of virtue, had been granted a boon at the moment of his death. He asked that his death might ever be, commemorated as a day of feasting. Hence Deepavali is known as 'Naraka Chaturdashi.

So this Deepavali, as you shop for Diyas, ponder upon its flame's spiritual nature. It will not only beautify and brighten your home, but will remind you of the transformations that it is meant to bring within.

Ingredients: (for around 30 small chiroti)
     For The Chiroti:
½ cup All purpose Flour
½ cup Rawa (very fine rawa)
Butter (unsalted and at room temperature)
Coconut Oil & Ghee for frying( use half oil nd half ghee)
For the Payasam:
     Chiroti - 10
Milk - 2 Liters( Full Cream milk tastes best)
Ghee- 1 teaspoon
Rawa -1/4th cup
Granulated Sugar(adjust according to taste) - 1 Cup
A few strands  of saffron, dissolved in warm milk
Cardamom powder 1/4 teaspoon 
Cashew nuts roasted in ghee few
Almonds to garnish



Method:
    In a bowl mix rawa, semolina, and mix together. Mix it well. Add water and make soft dough. (Like a chapati dough) Let the dough sit for 5 hours.
Once the dough is ready roll the dough by dusting some flour. Make 3 Chapati from one ball. Roll as thin as possible. But don not pressure more. We are going to layer them on top of each other
On first layer (first chapati) brush some butter, layer another chapati over it. Repeat the same process applying butter/ ghee.
Once they are ready, roll completely. Cut into small sizes as shown in pieces. Repeat the same process with rest dough.

Roll them gently without much pressure.
Fry them on medium heat in Ghee/ Oil on both the side. Till they turn a light brown color. They will puff up.( the rest of the chiroti can be stored in a air tight container for the next use.. or dipped into sugar syrup and it will turn into a Phenori).

Now for the paysa:
Heat ghee in a pan add rawa and roast it well. Add milk bring to a boil. Keep stirring in between, making sure the milk does not get burnt over at any point. Add the crushed chiroti to the milk and simmer for about 15 minutes, now add the sugar, saffron, cardamom and the fried cashew nuts. Stir well till the sugar dissolves. Serve warm or chilled garnished with saffron strands and almonds.

Wishing All my friends a very happy Deepvali... I kno I m a day late to post mind me i was too busy... Today my SIL delivered A baby Girl so i was bz going here nd there nd now i took a deep breath huh!... All in the family have double joy Deepavali plus the arrival of new one in the Family...

Ok without much a do I will post my Deepavali special... Gajar Ka Halwa

1 kg Carrots
1 litre Milk
1 teaspoon Cardamom seeds
3/4 cup Water
3 tablespoons Ghee
2 tablespoons Raisins
2 tablespoons Almonds
2 tablespoons Pistachios
450 grams Sugar

Put the water to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.

Add the milk. Cook on a low flame for 1 hour stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.

Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix well.

Remove the gajjar halwa from heat and arrange in a serving dish. Garnish with almonds and pistachios

Navrathri Specials

Navratri is a combination of two words. 'Nav' means nine while 'ratri' means night. Therefore, this celebration is literally translated as 'nine nights'.During Navaratri, we invoke the energy aspect of God in the form of the universal mother.

The worship of Three Goddess, Durga (the god of power and strength), Lakshmi (the goddess of wealth) and Saraswati (the Goddess of knowledge and learning). The festival leads to spiritual growth of a person. It gives the person inner strength to fight against all odds of life. The courage to fight for the weaker section of the society and against all evils of the society. So the first three days is dedicated to the worship of Goddess Shakti. The next most important requirement in life is wealth and prosperity and for that the next three days of the festival is dedicated to Goddess Lakshmi (the Goddess of wealth and prosperity). Knowledge and learning is another important aspect of life. And for that the last three days of the festival is dedicated to Goddess Saraswati. She is worshipped so that she blesses us with power of knowledge and helps us to attain spiritual enlightenment.

In Mangalore it is celebrated in a different way where the Sharada Idol (which is mad of Clay) is brought to the temples on the night of shrashti nd the Prathistapan of the Idol is done the next day during Moola nakshatra.

And as the Vahan of durga is tiger or can be even lion there is Tiger Dance in mangalore… These troups go to houses to dance and people give them money. U can watch the tiger dance of mangalore HERE.

Nd a peacock is kept besides sharadha matha(saraswathi) as it is the vahan of the Godess.

The Visarjan (immerse) of all the Idols r done on Vijaya dashami. The procession moves on with lozza Tableaux in which many of them are of Tiger Dance.

The men coloured as tigers nd garlanded with money.

When all the Idols are immersed in water 2 idol visarjan is done the next day.

That is of Venkatarama temple and of Jodu mutt.

The procession goes on almost the whole night… and the Visarjan is done early morning.

I must say I enjoyed the Navratri til the last year. This year I am missing it.

I hope u Guys saw all the vedios...nd felt good after seeing that.

Now after all this I come to the special food. During Navratri we have a day celebrated as Nave Javan (new food). Where people get the first harvest of rice either directly from farm or temples and keep them in their safe, and use a some in cooking and new harvest of vegetable is also eaten on tht day( this significances tht our house will never be short in food). A pooja is held at home and then the family has its lunch all together.

The specials done on this day is Ghashi or any other side dish, rasam/daali toy , phodi, any item of cucmber, cheppi kheeri, godshe (sweet/kheer).

When i speak about sweets more than any other sweet i remember about Kaju Katli. Vch i wanted to prepare nd even had bookmarked...but now m not gonna try it for months and that is bcoz Chirag(Guru's fren) got me a Kilo of Kaju Katli from India.... Thank U Chirag.

I prepared Val Val(vegetables in coconut milk), Cheppi Kheeri, Taushe Kosambari, Rulava kheeri.

Now in this post I will just post the recipe of Cheppi kheeri…Val val I will post some other day.

Cheepi(in Konkani) means without salt and sugar. This is a dish done with rice, coconut water and Haldi leaf. As I dint have haldi leaf I did not add ther (u can skip if u don’t have it but it tastes awesome with haldi leaf).



We need

Rice (white rice) – 1 cup

Coconut Milk – 2 cups

Haldi leaf -2 nos



Method:

Boil rice with 1 cup coconut milk in cooker and wait until 4 whistles.

Once the cooker is cooled down. Remove the rice in a vessel and add the other cup of milk and boil for atleast 5 -10 minutes (make sure u keep stirring if u r using a steel or a aluminum vessel orelse it will get stuck to the vessel).

At last ass the Haldi leaves and boil for 5 more minutes.

Now remove from flame. And serve hot.

While eating u can add salt to this kheer and eat.

Kesar Badam Milk for Krishna Janmashtami


Krishna Janmashtami is a day on which Lord Krishna was born to Devki and Vasudev. Krishna Janmashtami is also known as Gokulashtami or Gopalkala. On the occasion of Janmashtami, Dahi-Handi is played by young boys and sweets prepared using milk and milk products are served. Read on to find more about significance of Janmashtami, traditions and ritual associated with Janmashtami and how Janmashtami is celebrated.



Krishna Janmashtami is celebrated as the birth anniversary of Lord Krishna, the eighth incarnation of Lord Vishnu. This religious festival is celebrated throughout India with devotion and enthusiasm on the eighth day of the Hindi calendar month, Bhadon. Janmashtami is also known as Krishnashtami, Gokulashtami and Srijayanti. Everywhere the celebration is colourful and extravagant.
The Next day is Mosaru Kudike(In Mangalore) or Dahi Handi(in Maharashtra nd northen pars of India)…… Dahi Handi is celebrated on the next day of Janmashtami, during Nanda Utsav. A pot with the mixture of curd, milk, ghee etc is hung by the means of a rope about 20-30 feet hih or sometimes even more J . Contestants form a human pyramid to get their hands on the desired pot. It is definitely a challenging game to get hold of it as eager contestants make their way up to it, water is sprayed on them continuously by the onlookers to distract them. The winner who gets hold of the pot gets the Prize as decided… J.

We performed pooja  at home and it was totally divine J.
Now after all the significance and Story here is todays recipe:
I made this milk 2 days back on Krishna’s Birthday J.

Here is how to make it:
Badam – 25
Saffron Strands- few
Sugar as per taste (I used 4 tbsp)
Cardamom – 4-5 pods peeled
Milk – 3 Cups
Method:
Soak Badam/ Almond until the skin comes out neatly.
Now peel the skin of the almonds.
Take 2 Tbsp hot milk and soak Kesar/saffron in it.
In a mixer grind Peeled Almonds, saffron, cardamom and sugar into a fine paste.
Now remove it in a vessel and add rest of the milk and mix well until the almond paste gets equally incorporated.

Kesar Badam Milk is ready to serve.

Drink It Hot or cold as per your choice.
