I m kinda lazy to cook these days and the main reason is My Amma…. Now m sure all are wondering is there any relation to laziness and my mom…. It relates so much…. These days Amma is been cooking and m enjoying her delicacies…. That has made me lazy to cook…..
That doesn’t mean I don’t cook I do but rarely…. Nd about blogging I am less active…. and that’s y my dear friends I cannot visit each and every blog and drop a comment of appreciation… But all thanks to u sweet people who mail me or ping me and ask me how am I??? And so on……
Lets come up to today’s recipe……
Whenever I think of Capsicum the only thing I can think is using them in a stir fry, tikka bajjis, or rice…. I rarely add them in curries and subjis.. that’s becoz no one prefers them much in subjis….

Rice - 1 cup 
Capsicum(yellow, green and red) - 1/2 of each 
Cumin seeds/Jeera- 2 tsp 
Ginger - 1/2 inch pieces 
Garlic - 4 pods 
Green Chillies -2 slit 
Salt - for taste

Method:

Dice capsicum into cubes and keep it aside. Now in a pan heat one tsp of oil and crackle cumin seeds/Jeera. Add fnely copped ginger garlic to it and fry. Once done add the chopped capsicum,green chilly and salt and sauté for five min. Add rice,to this and fry till everything gets mixed well. Colorful capsicum rice is ready to eat. Serve it hot with raitha of your choice.

Navrathri Specials

Navratri is a combination of two words. 'Nav' means nine while 'ratri' means night. Therefore, this celebration is literally translated as 'nine nights'.During Navaratri, we invoke the energy aspect of God in the form of the universal mother.

The worship of Three Goddess, Durga (the god of power and strength), Lakshmi (the goddess of wealth) and Saraswati (the Goddess of knowledge and learning). The festival leads to spiritual growth of a person. It gives the person inner strength to fight against all odds of life. The courage to fight for the weaker section of the society and against all evils of the society. So the first three days is dedicated to the worship of Goddess Shakti. The next most important requirement in life is wealth and prosperity and for that the next three days of the festival is dedicated to Goddess Lakshmi (the Goddess of wealth and prosperity). Knowledge and learning is another important aspect of life. And for that the last three days of the festival is dedicated to Goddess Saraswati. She is worshipped so that she blesses us with power of knowledge and helps us to attain spiritual enlightenment.

In Mangalore it is celebrated in a different way where the Sharada Idol (which is mad of Clay) is brought to the temples on the night of shrashti nd the Prathistapan of the Idol is done the next day during Moola nakshatra.

And as the Vahan of durga is tiger or can be even lion there is Tiger Dance in mangalore… These troups go to houses to dance and people give them money. U can watch the tiger dance of mangalore HERE.

Nd a peacock is kept besides sharadha matha(saraswathi) as it is the vahan of the Godess.

The Visarjan (immerse) of all the Idols r done on Vijaya dashami. The procession moves on with lozza Tableaux in which many of them are of Tiger Dance.

When all the Idols are immersed in water 2 idol visarjan is done the next day.

That is of Venkatarama temple and of Jodu mutt.

The procession goes on almost the whole night… and the Visarjan is done early morning.

I must say I enjoyed the Navratri til the last year. This year I am missing it.

I hope u Guys saw all the vedios...nd felt good after seeing that.

Now after all this I come to the special food. During Navratri we have a day celebrated as Nave Javan (new food). Where people get the first harvest of rice either directly from farm or temples and keep them in their safe, and use a some in cooking and new harvest of vegetable is also eaten on tht day( this significances tht our house will never be short in food). A pooja is held at home and then the family has its lunch all together.

The specials done on this day is Ghashi or any other side dish, rasam/daali toy , phodi, any item of cucmber, cheppi kheeri, godshe (sweet/kheer).

When i speak about sweets more than any other sweet i remember about Kaju Katli. Vch i wanted to prepare nd even had bookmarked...but now m not gonna try it for months and that is bcoz Chirag(Guru's fren) got me a Kilo of Kaju Katli from India.... Thank U Chirag.

I prepared Val Val(vegetables in coconut milk), Cheppi Kheeri, Taushe Kosambari, Rulava kheeri.

Now in this post I will just post the recipe of Cheppi kheeri…Val val I will post some other day.

Cheepi(in Konkani) means without salt and sugar. This is a dish done with rice, coconut water and Haldi leaf. As I dint have haldi leaf I did not add ther (u can skip if u don’t have it but it tastes awesome with haldi leaf).



We need

Rice (white rice) – 1 cup

Coconut Milk – 2 cups

Haldi leaf -2 nos



Method:

Boil rice with 1 cup coconut milk in cooker and wait until 4 whistles.

Once the cooker is cooled down. Remove the rice in a vessel and add the other cup of milk and boil for atleast 5 -10 minutes (make sure u keep stirring if u r using a steel or a aluminum vessel orelse it will get stuck to the vessel).

At last ass the Haldi leaves and boil for 5 more minutes.

Now remove from flame. And serve hot.

While eating u can add salt to this kheer and eat.

Tawa Pulav



I have always loved rice dishes…. Tawa pulav is the one I always ate nd loved but never knew how to prepare it…. Thanks to Master Chef Sanjeev Kapoor for showing this recipe in his wonderful show Khana Khazana……U can watch the vedio here

One fine day when we were so bz playing Carom it just struck my mind that Ah….Khana khazana myt be going on on TV….I just changed the channel nd what do I see….One of our Fav dish Tawa Pulav… I left my game aside nd saw the whole episode… I tried it the next day itself so tht I can pack it for lunch.

Ingredients:

1/2 Cup Basmati rice

1/2 Cups chopped mixed vegetables(Carrot diced,Beans cut in lengthise,Capsicum cut in small dices,Gobi florets)

1/4 cup Fresh/Frozen Green peas boiled nd mashed

1/4 Cup chopped Tomato

1 medium onions chopped

1/2 tsp ginger garlic paste

2 tbsp pav bhaji masala(the key ingredient in this pulav)

1/2 tsp red chilli paste(add if you want extra spicy stuff)

2 tbsp coriander leaves

Juice of 1 lemon

Salt to taste

2 tbsp Oil

Method:

Soak Basmati rice in water for 15-30 mins and cook the rice.

Heat Oil in a thick bottomed Tawa or Pan,fry the Onions until translucent,then add ginger-garlic paste and then add the Veggies,peas and fry them for approx 6-7 mins until they are crisp.

Add pav bhaji masala,red chilli paste,salt and the rice to the vegetables and mix gently on high flame.

Sprinkle lemon juice and finely chopped coriander.

Serve it piping hot with some cucumber onion raitha.

For Raitha

Cucumber peeled nd chopped - 2

Onion peeled nd chopped - 1

Yogurt - 1 cup

Green chillies finely chopped - 1

Corriander leaves finely chopped - few strands

Salt to taste

Juice of half Lemon

Method:

Mix all the ingredients well add little water if required.

Serve with ne Pulav of ur choice.

Mushroom peas Pulav -Guru's Style

I was not well yest morning…Cudn even get up…had severe headache….Grrrrrrrrrrrrrrrrrr…I had to pack something or guru’s lunch box…but wht to do I cudn do nething….but it was so sweet of my hubby tht he told he will cook…he got up early(he doesn get up other dayss though :P). every time I cook peas pulav Guru keeps on telling Aps don’t add Khada gram masal…but I add to tht it doesn taste gud vthout tht it gives a flavor…But this time it was guru who cooked this for me…nd u kno he will not add garam masala :P…Photobucket

When I had my lunch I found mushrooms in the pulav(vch was a surprise ingredient).

I was sumwat ok by afternoon so I tried to get a click…m not making the dish luk gr8 as it was…Sorry Guru….

Here is what he did

First he soaked 1 cup of rice for half n hr….

Then in a bottom vessel add ghee, and fry almost 10-12 Cashewnuts(broken), once they r brown add sliced onions(1), add peas, mushrooms, and rice nd fry for a minute or two then add 2 cups of water and salt and cook until water evaporates nd rice is done. Garnish with finely chopped Corriander leaves.

This is whnt he told me I m repeating the same. :P

Festive Time- Do have some yummilicious food

Hey all…..enjoying weekend…yeh…some r done with weekend like me and waiting for next one isn’t it???
My last week festive post was just lying down I couldn’t post it up bcoz I was stuck with some work….so without much a do here is my post.

By the way Happy Krishna Janmashtami, Happy Independence Day.
Suttha Punnav or Rig Upakarma is observed on the day after the Purnima or Full Moon day in Shravan month. This Day is the most auspicious day to chant the Supreme of all the mantras, the sacred Gayatri Mantra. Gayathri is the Supreme Goddess and considered as the Mother Goddess. Gayatri Mantra is the foundation and the theme for every mantra in Hinduism.
On this day, all the Hindus mainly Brahmins recite Gayathri Mantra. Any Hindu, celibate (Brahmachari), the Grihastha (householder) or the Vanaprastha (old people) have to chant Gayatri Mantra on this Day. Brahmins(men) who wear the sacred thread, Jannuve or Janeyu or Yagnopaveeta, recite the Gayathri Mantra.
The prayer of that people recite to wash away all the sins on this day is something like :-

"For the removal of all my sins and thereby to secure a divine blessing and for qualifing myself to perform the essential duties of Brahmanas as prescribed in the vedas and smritis and adopted by the really good in their conduct I put on this Yagnopavita".

While removing the old thread, the mantra recited means :-

"I throw away the broken dirty old thread, may the new one bring on long life and Brahmana's brilliance."

It is always said Suth(thread) ghalnu suth khavka(wear the thread and eat something like thread). So Shevayi is done one this day.

For my hubby its his first Suttha Punnav after Marriage. And its Nave Parab(new festival) for us. Nave Parab is new festival (the one which comes during the first yr of marriage) which includes Ugaadi,Suttha Punnav,Deepavali. The new couple go to to the girls house during these functions and get blessings from their elders, gifts and not but least Royal food(which we missed as we weren’t there we got our gifts though ;). )
Every yr I used to enjoy the delicious lip smacking food Amma prepared…but this yr I have to cook myself. But no worries as it was a weekend I cud manage things easily….. cooked Varities of Phodis (phagil,Goint,Dudde,& kele phodi), Daali Toy,Shevayi Godshe, Rice and fried Happolu…..

Now to some recipes vch I haven’t shared
Kele Phodi:

Raw Banana -1 ( I used only one as I had many more things to hog ;) )
Chilli powder – 2tsp
Hing – a pinch or 2
Rice flour – for coating
Salt to taste
Method:
Roughly peel the skin of banana and cut them into 8 pcs
Then apply chilli pwdr,salt,hing and rest it for half n hr
Then roll it over rice flour and deep fry them until crisp.

U can enjoy these as a tea time snack too.

Daali toy:

The famous dish among us Konkani’s it is also known as DDT(data daali toy/Thick daali toy) ;0. jokes apart now about this I think I need not explain more as most of them myt have heard about this…I wud like to share this recipe

We need:
Yellow lentils/ toor daal – 1 cup
Green chillies -3
Red chillies -2
Curry leaves few
Salt to taste
Hing/ asafetida – 3 pinches or so
Mustard seeds- 1 tsp
Ghee – 1 tbsp (Amma used ghee as it gave a good aroma u can use coconut oil )

Method
First boil toor daal in enough qtty of water( atleast 4-5 whistles ) until done
Remove it in a vessel and ad green chillies, salt hing and get it a good boil( atleast for 5 minutes)
Now in a small frying pan heat ghee add mustard seeds…once they splatter add curry leaves and broken red chillies and season it over the daal.
Yummy daali toy is ready to serve.

Now after a fry nd a side dish Dessert time……
Shevayi kheeri/ vermicelli kheer

Kheer is the most easiest sweet I have ever done. No much procedures no lotzza ingredients just very simple.
Here is wht we need:
Shevayi / Vermicelli – 1 cup
Sugar – 1 cup (I used 1 cup as it was not too sweey)
Cardamom powder – 1/4th tsp
Casewnuts broken ( u can add as much as u want)
Saffron few strands
Milk – 3 cups
Ghee 2 tbsp
Method:
Heat 1 tbsp ghee and fry cashew nuts and keep aside.
Heat ghee and fry vermicelli for a minute or 2 then add milk, saffron strands and boil until vermicelli is cooked……once its cooked add sugar and keep stirring for a minute then get a bubble boil….and add fried cashew nuts and cardamom powder.
U can relish this dish hot or Cold.

Bitter Can Taste Better or can say best?????

How r all u guys???? Weekend is nearing……..So I thought get out of diet tht day??? How about something fried? Something bitter? r’nt u tired of sweet always or the same taste………I m so thought I’ll makw something better or best out of bitter…….Have u ever had drumstick leaves ambado (fritters)…..no then do try it it tastes yum nd ul never feel the bitter taste……….Amma used to make them at home(mamama used to get the leaves for us) and I used to cherish them sitting like a queen with a plate of ambado….huh I remember the time when Sud..nd I used to fight for the ambado’s telling takka/tikka kasane chada dilla nd all(y is he/she given lil more). I miss tht bro!! L but after all tht its life….we gona go far…..

Today I m gonna post ambado nd karathe phodi(karela/bittergourd) :

Mashinga palle Ambado :

Mashinga Pallo/ Drumstick leaves – 2 cups (coarsely cut with hands)

Rice-1 cup (soaked for 4 hrs or so)

Red chillies – 12-15

Salt to taste

Method: Grind rice,chillies, into a very fine and semi-thick paste.

Now in a bowl mix the leaves, salt, and the paste.

Heat oil….now make small balls nd flatten them deep fry in oil and Relish.

Karathe Phodi:

Karathe/Bitter Gourd -2 Rice - ½ cup Red chillies – 9 Salt to tasteHing a pinch

Cut roundels of karathe and apply salt and leave for n hr.(this removes the bitter taste of karathe thts wht amma used to tell me).Grind RC, Rice and hing into a thick paste(avoid adding lozza water).Now squeeze the water from karathe and apply the paste and rest for ½ n hr….Then deep fry them until crispy.

Chudi Pooja and Patholi for Nagar Panchami

Choodi Pooja And Nagar Panchami :
Being here in SA I never knew if I cud get Tulsi Plant or even Dibrankur. Then I decided to search here nd there nd I did it sorry We did it......we went on here nd there got tulsi plant and flowers for chudi......i tied them up...huh now i cud take a deep relieving breath.

I got up early in the morning so that I cud finish everything by 8 ( including my breakfast). I prepared Rulavan godshe as Naivedya for Tulsi ( orels I wud have prepared God Povu but this sweet was on demand by Guru nd his friend). He he he myt be this was the first Friday where we got up so early…..

I wanted to post this on Saturday itself but then thought lemme wait till Sunday so tht I can post 2 festive special on tht day. That’s Chudi pooja And Nagar Panchami.
Now spare with me and try to read the significance of both the festivals. I have collected it from Many sources like my Mom, Granny nd last but not the least Google God(:O)……..google god bcoz I think ne one has a bit of doubt they always ask google….he he he.
Now for the significane:
Tulsi:
Tulsi came out of the ocean during Amrita manthan as a younger sister of Lakshmi. She too was devoted to Lord Vishnu and wanted to marry him. But Lakshmi who was already married to him did not like the idea and cursed her to become a plant. Thus the tulsi plant was born. But the all merciful Lord Vishnu took pity and fulfilling her wish declared that when he will be in the form of a saligram she will remain close to him in the form of a tulsi leaf. Therefore even today a saligram will have a tulsi leaf along with it. In front of every GSB home there will be a tulsi katta in which a plant grows round the year.
Although the prayers are offered to the Lord in Tulsi everyday by watering the plant in the morning and lighting an oil lamp before it in the evening, on Kartik Shukla Dwadashi there will be an annual Tulsi Pooja in the evening (in some quarters morning also) when the tulsi katte will be beautifully decorated and there will be clay tray lamps glowing besides firework by the children with the support of the elders in the home. It will be a joyous occasion. In the northern India in some communities it is called the Tulsi vivah or the wedding day of Tulsi with the Lord.
Choodi Puja:
A tulsi plant has medicinal properties capable of purifying the surroundings. In the month of shravan our ladies will adore tulsi on every Friday and Sunday with ‘chudis’ of flowers.

The door step (Humboru/Hosthilu) are decorated with chalk designs (Rangoli or Humbraa Chalk). This is how i decorated.
First, pooja is offered to Tulsi plant with a lamp, water drops are fed to the Tulsi plant and also consumed by the one offering the pooja (Aachamana). Haldil and Kumkum are applied to Tulsi as a symbol of womanhood, sweet is offered( any sweet which is prepared at home) (but ne thing made of rice is not offered), followed by Soorya Namaskaara(Sun Worship).
Then Choodi is offered to Tulsi and aarati (Flame)( I got a new plate for Aarti) is shown to Tulsi.

I got tulsi and planted it here and performed the Pooja.
There are no mantras and no shlokas but the married ladies alone can perform this pooja after a fast in the morning. Among the married ladies, those who are close in relation(elders) but far away by location are remembered and a mini-chudi will be sent by mail/post with a little kumkum (vch I m going to do). And they will send a similar chudi with her blessings. Thus in the month of Shravan our chudis will cross the seven seas and travel to far off lands
Later, they offer pooja and Choodis to the Door step (Humboru). Finally, all the gods within home are offered similar pooja and Choodis.
The remaining Choodis are offered to elderly women by the younger ones. They all wear the Choodi in their hair locks. In return, the elders also present a choodi to the younger ones. For the next four weeks or eight days, GSB women will be busy, going from house to house, offering choodis and receiving choodis!. But I wudn be bz going here nd there :O.

There is also a custom, that the wife offers the first Choodi to her husband along with a worshipped coconut Veedo (beetle leaves with Arecanut), believed to bring happiness and goodwill for married women and husnabds long life.
Superstition apart, Choodi Pooja is symbolic where a woman feels complete within her married life. This pooja also gives scope for women to keep social contact with their families at least once a year!

A standard Choodi requires many flowers and herbs to be collected, as mentioned here -
1. Ratnagandhi

2. Ratha Pushpa
3. Gauri Pushpa
4. Kaaylya Dolo (Crow's Eye)
5. Anwaali
6. Aarati Pushpa
7. Kangani Pushpa
8. Shanka Pushpa
9. Mithaai Pushpa
10. Cat’s Nails
11. Wild Grass (Dibrankoru)
12. Plantain yarn (Vaayu) for tying
13 Patkali
14. Small button roses( optional as it is being used these days).

I cudn translate some name in english.... if some one knpows do let me know. And about adding all these flowers I m sure we cannot add all the flowers as these days its very difficult to find. I just added ratnagandi,dibrankoru,patkali(orange and pink).

Nagar Panchami :
It is on the fifth day of the bright half of the Shravan that Naga Panchami, or the festival of snakes, is celebrated in India. Snake worship, no doubt, owes its origin to man's natural fear of these reptiles. However, in Hindu culture, they own a prominent place. Hindu mythologies are filled with stories and fables about snakes, the most important being the Sheshnaga of Lord Vishnu (it is on this snake that Lord Vishnu reclines while sleeping in the sea). Thus, it is quite understandable that a festival called Naga Panchami is observed in India, in the honor of snakes, every year.Naga Panchami is one of the most ancient fasts in India and also finds mention in the Puranas. It is believed to be one of the most auspicious days of the entire year. According to the Bhavishya Purana, when men bathe the snakes Vasuki, Takshaka, Kaliya, Manibhadra, Airavata, Dhritarashtra, Karkotaka and Dhananjaya with milk, on the fifth day of the bright fortnight of Shriven, they ensure freedom from danger for their families. As per a legend, on the day of Naga Panchami, ploughing a field is forbidden.There are a number of legends associated with Naga pancahmi. One has it that on this day, while tilling his land, a farmer accidentally killed some young serpents. The mother of these serpents took revenge by biting and killing the farmer and his family, except one daughter, who happened to be praying to the Nagas. This act of devotion resulted in the revival of the farmer and the rest of his family. Since then, Nag Panchami has been celebrated in India. It is believed that in reward for worship, snakes will never bite any member of the family. There is yet another legend related to the festival. It goes that young Lord Krishna was playing with the other cowboys near river Yamuna, when the ball got entangled in the high branch of a tree. Krishna volunteered to climb the tree and fetch the ball. Below the tree, a terrible snake Kaliya used to live in the river. Suddenly Krishna fell from the tree into the water. The terrible snake came up with anger, but Krishna started jumping on its head. Finally, Kaliya said sorry to Lord Krishna and He forgave the snake and let it go free. Since then, on Nag Panchami day, the victory of Krishna over the Kaliya snake is commemorated. In India, snakes are so revered that temples have also been erected in their honor. There is a particularly famous one in Mysore, at a place called Subramania (Sheshnaga). The Naga culture was fairly widespread in India before the Aryan invasion, and continues to be an important segment of worship in certain areas. After the invasion, the Indo-Aryans incorporated the worship of snakes into Hinduism. The thousand-headed Ananta is Vishnu's couch and also holds up the earth, while snakes play an ornamental role in the case of Shiva. Naga panchami is another form of honoring the snakes.
I Remember Anu (dad) used to perform the pooja in our family temple. Amma used to start early in the morning yelling at both the kids…. My bro nd Me. Utta Utta velu jatta magiri niddaychi all these things ( get up get up we r getting late u have a nap later). Nd we lazy bugs used to get up nd then get ready slowly. By the time everything is ready…….nd we perform the pooja and come bac home have have our breakfast (which wud be kotto(Just like idli but baked in jackfruit leaves) /idli most of the time.. Nd for Lunch she prepared patrado, rice, daali toy and cheppi keeri (rice in coconut milk). She never prepared Patholi more bcoz Anu never ate it we( bro nd me) ate one or 2. but Amma liked it…………so mamama( Amma’s Amma) used to get some at home.
Here my hubby loves it so he just asked me if I cud prepare it for him….nd I never said no……….. I never knew the recipe too so I called Amma to ask for the recipe but probably she was sleeping… then I remembered about
Aayis Recipeand thought of following the same…nd when I was going thru tht I found my SIL on line and asked her the recipe once more she suggested the same….she even said tht instead of rice I cud use wheat flour…. But I never had a pinch of it at home….Evening I spoke to amma nd she too suggested the same.
I think u guys r tired of reading my scrap ain’t it? Plz spare me until I give u guys the recipe….ok ok il continue………………… Patholi is the most important sweet dish for Gowri festival and even Nagar Panchami. During these festivals, we can find ‘Turmeric leaves’ at native (those who are in , can find these leaves in Mangalore stores). leaves are used for this dish. Since I could not find any of these leaves here, I used Banana Leaves for preparing this. Though you would feel the absence of turmeric leaf fragrance( u can find the Banana leaf frangrance atleast), this is a very good idea for those who crave for patholi.

Ingredients:Coconut 1 cupRice 1 cupPoha(avalakki) 1/4 cup (one handful)
Jagegry – 3 tbsp(Amma suggested it)SaltTurmeric leaves 8-10 or Banana leaves cut into 5”* 5” squaresFor filling:Coconut 3/4 cupJaggery 1/2 cupCardamom powder 1/2 tea spn
Method:Soak the rice in water for around 1hr.Grind it along with coconut (without adding much water). Now add washed poha and grind to get a smooth paste. Add salt.
Heat coconut and jaggery mixing continuously till the jaggery melts and forms a uniform mixture. Add the cardamom powder.
Spread a thin layer of the rice paste on the leaf
Spread around 1-2 tea spns of stuffing on it.
Fold the leaf(or parchment paper) as shown.
Pile in the steamer or in a cooker vessel.
Steam it for around 12-15mins.

Makes around 8-10 patholis.
Tastes delicious with Ghee.
