Masala Chips Chat

It’s a kinda cooking blues these days… ;)... I just peep into all blogs nd crave for the food.... Sorry that i couldn't leave comments over there.... I will soon get back to all ur blogs dearies.
But yeh cooking something delicious I m always Game!!!!.
How about using sweet potato chips and making something yummy…. How about a chat????? Sounds new na…..
I got this idea long time back….. If both the chutneys are ready it can be made in a Jiffy….

For the Sweet Chutney:
200 grams dates
100 grams tamarind
1/2 cup jaggery
1/2 teaspoon chilli powder
1/2 teaspoon roasted cumin seed powder
1/4 teaspoon black salt
salt to taste
Method:

1.Remove seeds from the dates and tamarind, wash it, add 1 teacup of water and jaggery. Leave for 2 hours.
2.Cook in pressure cooker for 4-5 whistles.Allow the mixture to cool.
3.Thereafter, blend in a liquidiser and strain the pulp.
4.Add chilli powder, cumin seed powder, black salt and salt.
5.Mix all the ingredients properly and store this chutney in air tight container.
4.Use as required.
For the Spicy/Green Chutney
2 cups chopped fresh coriander leaves
1 cup fresh pudina/mint leaves
2-3 green chillies (adjust acc to spice)
2 tbsp lemon juice
2 tbsp  water
1 1/2 tsp sugar
Pinch of salt
1 Wash pudina and coriander leaves thoroughly and allow the water to drain.
2 Grind the pudina, mint leaves, salt, sugar, lemon juice and green chillis to a fine paste, by adding 2 tbsps water.
3 Remove into a bowl. Refrigerate until use. Goes well for chaats like Pani Puri, hot snacks like Samosa or as a spread for sandwich.
Now for the Chat:
·         Sweet Potato Chips – 20 -25
  • 250 gm Kabuli Chana
  • 3 Potatoes
  • 1 tsp Cumin Powder
  • 1 tsp Chaat Masala
  • 1 small Onion
  • ¼ inch Ginger piece (grated)
  • 1 Tomato
  • 2 Green Chilies
  • 1/2 tsp Red Chili Powder
  • 2 tbsp Chopped Coriander Leaves
  • 1 tsp Oil
  • Salt to taste
  • Sweet chutney as reqd
  • Spicy chutney  as reqd
  • Thick yogurt
  • fried moong daal
Method
  • Soak Channa for atleast 3- 4 hrs.
  • Boil the chana for 20 minutes. Wash the boiled chana and drain the water. Now boil potatoes, peel it and cut it into small cubes.
  • Chop onion and tomato finely . Remove seeds from Green chili and chop it finely. Roast cumin powder.
  • Heat oil in a non stick pan and put green chili, ginger, onion into it for a minute. Now add Chana and potato and toss till they turn slightly brown.
  • Add tomato and toss it over moderate heat. Now sprinkle cumin powder, red chili powder and chaat masala. And switch off the flame
  • Now crush the chips (around 10 chips are enuf for a plate)and put them on the plate….
  • Pour aloo channa gravy on it… Now pour thick curds on it.
  • Soon add sweet and spicy chutney over it and
  • Sprinkle chaat masala,fried moong daal and a bit of chilli powder
  • And serve immediately

Tips:
1.This chutney can be used for all types of chaat such as bhel puri, sev puri, ragda patties, khasta kachori, pani puri and any other type of chaat.
2.Sweet chutney can be stored in the refrigerator for 1 week and can be freezed in the fridger for 2 weeks. But for storing the chutney, do not make it too liquid. Keep the pulp thick.

Tawa Pulav



I have always loved rice dishes…. Tawa pulav is the one I always ate nd loved but never knew how to prepare it…. Thanks to Master Chef Sanjeev Kapoor for showing this recipe in his wonderful show Khana Khazana……U can watch the vedio here

One fine day when we were so bz playing Carom it just struck my mind that Ah….Khana khazana myt be going on on TV….I just changed the channel nd what do I see….One of our Fav dish Tawa Pulav… I left my game aside nd saw the whole episode… I tried it the next day itself so tht I can pack it for lunch.

Ingredients:

1/2 Cup Basmati rice

1/2 Cups chopped mixed vegetables(Carrot diced,Beans cut in lengthise,Capsicum cut in small dices,Gobi florets)

1/4 cup Fresh/Frozen Green peas boiled nd mashed

1/4 Cup chopped Tomato

1 medium onions chopped

1/2 tsp ginger garlic paste

2 tbsp pav bhaji masala(the key ingredient in this pulav)

1/2 tsp red chilli paste(add if you want extra spicy stuff)

2 tbsp coriander leaves

Juice of 1 lemon

Salt to taste

2 tbsp Oil

Method:

Soak Basmati rice in water for 15-30 mins and cook the rice.

Heat Oil in a thick bottomed Tawa or Pan,fry the Onions until translucent,then add ginger-garlic paste and then add the Veggies,peas and fry them for approx 6-7 mins until they are crisp.

Add pav bhaji masala,red chilli paste,salt and the rice to the vegetables and mix gently on high flame.

Sprinkle lemon juice and finely chopped coriander.

Serve it piping hot with some cucumber onion raitha.

For Raitha

Cucumber peeled nd chopped - 2

Onion peeled nd chopped - 1

Yogurt - 1 cup

Green chillies finely chopped - 1

Corriander leaves finely chopped - few strands

Salt to taste

Juice of half Lemon

Method:

Mix all the ingredients well add little water if required.

Serve with ne Pulav of ur choice.

Weekend Blast!!!!!

Hey foodies!!!!
U guys enjoying weekend…. M envying u all…… I m done with my weekend….Ne ways my weekend was toooooooooooooo gud y so many “o”s don’t worry I’ll tell u y….. We had a Burger Party at home where I prepared burgers nd Lemon Mint cooler…..nd all enjoyed the burger to the last bite nd cooler till the last sip…... They praised me so much…. I was on cloud 9…. All roadie freaks went to Gelato…….yum it was just melting down our mouth….. I just relished it like I never had something like tht before. Now don’t ask me whts the difference between Gelato nd Ice Cream….This cud tell u more than me. U can find gelato recipe here. Ok now after all this the real part of my weekend which made me start searching if there was cloud 10 :P. I got a beautiful surprise from my sweet hubby…. B4 u ask me wht lemme tell u I got 2 wonderful jewellery sets :P…..

Lemon Mint cooler

I assure u this cooler not only is gives u a refreshed feeling but also your tongue keeps luking for the last bit of it. He he he I think i'll come down to the cooler recipe
We need :
Lemon – 3
Mint – ½ cup
Sugar – 3 tbsp
Honey – 3tbsp
Salt a pinch

Method:
Grind mint leaves.
Dissolve sugar in 4 glasses of water.
And add the ground mint, lemon juice, honey, a pinch of salt and mix well. U can add crushed ice cubes ( I used cold water instead of normal water I skipped crushed ice).
Ur cooler is ready to serve.Photobucket

Lovely Corns

PhotobucketI always keep saying that my hubby is a Bumper Jackpot for me............or i can say a Alladdin’s Ginnie I open my mouth for something its always ready...........As i told last time My sweety cooks for me atleast once a week sometiiiiiiiiiiiiiiiiiimes twice thrice.......... His first question will always be Kasa Khatta??(what wil u eat??) nd my answer Kasane jatta laik jallari jalle...(anything tasty)....this weekend was the same version.......but he adds telling wht u’ll eat?? i’ll eat fish fry......nd he decides to cook some corn for me. This time i cooked the fish for him i even *touched* the fish n all.atlast comes the turn of my corn...........

Photobucket without much a do i start with the most simple corn recipe. Here’s it.

Fresh corn kernels – 1 big bowl

Italian seasoning -1 tbsp(rosemary,basil,oregano)

Garlic powder – 1 tbsp (if u don’t find it then add finely chopped garlics almost 10)

Olive oil – 1tsp

Lemon juice – 1tsp

Salt to taste



Method:

Heat a pan add olive oil..corn kernels..........garlic powder..Italian seasoning..............salt and stir for 5 minutes then at last add lemon juice and switch off the flame.

Add ur love into it and serve hot.

U can enjoy the crunchy corns.

Crunchy Munchy # 3 Charmuri Chuda/Charmuri Chivda

When u feel like munching something without oil yet something crispy and yumm here is Charmuri Chivda/Chuda for u…
Charmuri is a Konkani word for puffed rice.
Ingredients:
Puffed Rice/Murmura/Kurmura - 7 cups
Peanuts/Groundnuts - 1 cup
Curry Leaves - a sprig (optional)
Red Chilli Powder - 2 tsp
Turmeric/Haldi - 1/4 tsp
Thick sev – 1 cup
Powdered Sugar - 1/2 tsp
Oil - 3 tbsp

Method:
1. Wash curry leaves and pat them dry.
2. Heat oil in a kadai.  Fry the peanuts till colour changes or roast the peanuts in MW oven.
3. Now, in the same kadai add curry leaves.  Saute till crisp now add puffed rice and sauté for a minute.  Then add fried peanuts.
Allow to cool for a while then add thick sev, red chilli powder, turmeric, salt and sugar. 
5. Mix well and chivda is ready. After it cools completely, store it in air tight container.

First Sunday with my Hubby in Jeddah


Hey guys!! Enjoyed ur weekend??? We did too.... this time it was double weekend.. our regular weekend is on Thursday and Friday.... We got a bonus A Sunday too... every time there was a Sunday missing in Jeddah as it was a week day... we found it this time... next week we lose it again...... ;). As it was Easter my hubby had off. I decided to prepare something yummm nd his fav too... My fav also but first preference this time is to my Dear Husband.



In Mlore we used to get Ready made puris and then mae the msala nd relish them,here we dont get ready made puris so i had to make them.Pani Puri Is every bodys fav in our place. The first time i had prepared puris for pani puri it dint fluffL. I asked Uj as to how it wud fluff she told me the recipe but i never found time to make them... when Uj posted her recipe last month i decided of doing them but again Lazy Dazy!! Yest i decided i shud prpr them... and hog. Before preparing them i asked my hubby to adjust if the puris don’t fluff but BOY!!!!!! It did fluff (no boundaries to my joy). After it was done my Hubby was on nd on relishing them. We love it. My hubby has even aske me for a pani puri session when we r in Mlore :). Nd yeh tht my Burgers Tasted Like Mc.D we even have burger party there.
I had the yum yum Pani puri. I followed Ujwals Recipe for Paani Puri but I made some changes in the Pani puri instead of wheat flour I used APF( all purpose flour) and for the masala i used boiled and mashed potatoes parboiled moong(un sprouted), salt, onions and chaat masala. And for the sweet chutney i added 10-12 dates which i had soaked for 15 minutes in hot water and ground it with jaggery tamarind 2 red chillies. Then mixed it with salt..

All u have chaat corners at ur place??? Here we don’t have.... I m missing India ...... ;-( :(. But soon we’ll be there for our vacations.... All my friends myt be missing India too..

Aloo Chaat – Sherzaad Style





Sherzaad – the first restaurant I had been to in Saudi Arabia. The appetizer went with a Aloo chaat I had the same aloo chaat in my mind but when the first dollop was in my mouth I tasted the tangy cool chaat.
As I don’t eat chicken, fish and paneer is my last preference in starters so I chose this. I must say it was really yummmm. I hadn’t tasted this chaat before.
It happened last week to go again to the same restaurant again nd have the same aloo chaat. When I was having I just murmured Guru how about me trying this at home will it taste the same? And he replied ‘Y not but same taste donno’ Tak here I decided to prepare the same chaat and it had to taste the same. Last nyt I prepared this and Boy it tasted the same. Happy was my dearest hubby :D.
He he he next time I need not go to sherzaad to eat this aloo chaat.

Here is what’s needed:
For sweet chutney-
Dates-10
Red chili powder-1tsp
Tamarind – a lemon sized piece
Jaggery- a lemon sized piece
Salt to taste
Soak dates in warm water for half n hour then unseed them. Grind all these ingredients into smooth paste ( thick paste).

For the green chutney:
Mint leaves -10
Coriander leaves – few strands
Green chilly – 1 small
Salt a pinch or two
Grind all these ingredients into fine paste by adding very little water (keep it thick)

For chaat:
Potatoes -3 big sized ( boiled peeled and cut into ¾” cubes)
Finely chopped capsicum – 4tbsp
Finely chopped onions – ½ cup
Finely chopped tomatoes – ½ cup
Salt to taste
Few drops of lime juice:
Now to the chaat method:
In a bowl add all the Ingredients – for chaat, then add 1 tbsp of green chutney and 10 tbsp of sweet chutney, lemon juice and salt and mix well.
Make sure that each piece of potato has sheltered with chutney.
Now just tang the chaat in ur mouth.

Mushroom & Gobi Tikka

My drafts have started singing a song these days tht is Aps Aps come again empty me as soon as u can…. :P I kno this a big PJ… By the way today m gona post a draft of mine which was lying from almost more than 3 months… I had prepared these when I was in Saudi….. I always read a tikka recipe I realize… ah there is one in my draft too I ve to post it… but some or the other reason I cud not…
Now tht I m a bit bz nd in my SIL’s place the thing I ve to do is post one from my draft… I m sure I will get bac with a fresh recipe soon….
Both of us… wanted to try this or I can say wanted to try it at home…. But never got time….. but here is Aps Presenting u the successful tikka recipe which was a Hit…..

We need
15 Button Mushrooms
15 Gobi/Cauliflower florets
2 Tomatoes cubed and deseeded
1 or 2 onion cut into cubes
2 capsicum cut into cubes
Skewers

For Marinade
1 cup fresh curds
2 tbsp ginger paste
3 tbsp garlic paste
2 tsp Kitchen King masala
1 tsp cumin powder
2 tsp coriander powder
1 tsp tandoori masala
1 tsp red chilly powder
2 tsp powdered kasuri methi
4 freshly crushed peppercorns
2 tbsp lime juice
1/4 tsp turmeric powder
3 tbsp oil for basting
Salt to taste

Method:
In a bowl, mix curds and all other ingredients except oil Add the Gobi Florets and Mushrooms and mix well. Cover the bowl and marinate for 3 hours
Thread the Gobi & Mushroom onto skewers Place a tomato cube, capsicum nd onion in between each gobi & mushroom, repeat the process and keep them ready.
Rub the prepared tikka with oil and place it over the grill.
Grill for 10 min in an oven at 180 C/ 350 F . overturn again, baste with oil and grill for another 10 min or till tender and crisp. Serve hot
Note: u can even use non stick pan and fry for 15 minutes turning equally to make tikka if u do not have an oven.
Serve Hot
Squeeze Lime when U eat if reuired.
Verdict: Simply Superb …. Crunchy munchy Starter.

Veg Frankie

Hey All !!!! b Hope U all enjoyed ur New year.. got bac to norm….. Our new yr was superb.. we had been to Jet ski, Sand dune…. Beach…nd the whole day was simply superb…. (day bcoz 31st nyt all my plans went super flop…) Ne ways leave tht aside and lemme think of wht good had happened…. M sure this yr is gonna give me new surprises nd will be a fun filled year…. Wishing the same to all….

I had always heard about Veg Frankie ….but never tasted it neither had tried it out..Its famous in Mumbai…. This is one among my Hubby’s fav’s So on spl request I googled aroung here nd there nd clubbed many posts nd got into one….. : ) ….. It was tasty nd yummy… The only thing wht happened was my roti’s very small :P……

Here is wht we need
For the Tikki –
Potatoes boied nd mashed -2
Frozen green peas boiled nd mashed – 1/4th cup
Carrot grated – 1
1 teaspoon ginger garlic paste
1 teaspoon chilli powder( add according to spice reqd)
Fresh coriander leaves finely chopped
salt to taste
2 tablespoons oil to fry
1 teaspoon cumin powder
1/2 teaspoon chat masala
1 tsp Kitchen King Masala
Mix all the Ingredients well and make small balls… flatten the tikkis, heat a griddle and Shallow Fry each tikki until crisp. And keep aside.
Other Ingredients req…
Tomatoes thinly sliced – 1
Onions Thinly sliced – 1 or 2
French Fries – I used – but optional
Tomato Ketchup
Chaat masala to sprinkle on each roti
4-5 rotis or flatbreads ( I used Phulkas), If U have Left over Chapathis or phulkas u can use them too....
Method to make Rolls/Frankie’s
Place A phulka…. Spread Tomato ketchup sprinkle a pinch of Chat Masala, Break the tikkis into 2 and place it on the roti, keep 3-4 French fries, onion slices and tomato slice on them, roll and close both ends forming a neat wrap.(My phulkas were not pretty big so I cud not roll it completely)
Some make it like a mixture and also add instead of tikkis, U can try both the ways :)
Note: Apply a toothpick in the center to hold the roll if the rolls are not completely closed (or ur rotis or phulkas r small) this helps the mixture not to fall out.
This is a veg recipe, but you can also add eggs to make it A Egg Frankie.
