Tawa Pulav



I have always loved rice dishes…. Tawa pulav is the one I always ate nd loved but never knew how to prepare it…. Thanks to Master Chef Sanjeev Kapoor for showing this recipe in his wonderful show Khana Khazana……U can watch the vedio here

One fine day when we were so bz playing Carom it just struck my mind that Ah….Khana khazana myt be going on on TV….I just changed the channel nd what do I see….One of our Fav dish Tawa Pulav… I left my game aside nd saw the whole episode… I tried it the next day itself so tht I can pack it for lunch.

Ingredients:

1/2 Cup Basmati rice

1/2 Cups chopped mixed vegetables(Carrot diced,Beans cut in lengthise,Capsicum cut in small dices,Gobi florets)

1/4 cup Fresh/Frozen Green peas boiled nd mashed

1/4 Cup chopped Tomato

1 medium onions chopped

1/2 tsp ginger garlic paste

2 tbsp pav bhaji masala(the key ingredient in this pulav)

1/2 tsp red chilli paste(add if you want extra spicy stuff)

2 tbsp coriander leaves

Juice of 1 lemon

Salt to taste

2 tbsp Oil

Method:

Soak Basmati rice in water for 15-30 mins and cook the rice.

Heat Oil in a thick bottomed Tawa or Pan,fry the Onions until translucent,then add ginger-garlic paste and then add the Veggies,peas and fry them for approx 6-7 mins until they are crisp.

Add pav bhaji masala,red chilli paste,salt and the rice to the vegetables and mix gently on high flame.

Sprinkle lemon juice and finely chopped coriander.

Serve it piping hot with some cucumber onion raitha.

For Raitha

Cucumber peeled nd chopped - 2

Onion peeled nd chopped - 1

Yogurt - 1 cup

Green chillies finely chopped - 1

Corriander leaves finely chopped - few strands

Salt to taste

Juice of half Lemon

Method:

Mix all the ingredients well add little water if required.

Serve with ne Pulav of ur choice.

Karathe Kosambari/Karathe Kismuri/Fried bittergourd Salad

Karathe… Bitter gourd…. Karela… how many of u like this veggie?? I m the one who likes it…. Though bitter I love its taste…
Especially the Kosambari/Kismuri made of bitter gourd is one of Mom’s n my fav (neither my hubby nor my bro like It :D). Whenever Amma made this I used to have a big plate of Kismuri more than rice….

So here is the simple yet Yummy recipe for all of U
Ø 2 medium sized bitter gourds
Ø ½ cup finely shredded coconut
Ø 2 finely  chopped onions
Ø 1 or 2 green chilly chopped
Ø Oil for frying
Ø salt
Directions
 v Wash the bitter gourd, and chop into very fine pieces.
v   Pre-soak the bitter gourd with salt, drain the water to remove the bitterness.
v Heat a heavy bottom pan, add oil and then the bitter gourd pieces. Keep stirring until it turns brown and crisp.
v Remove the bitter gourd on a kitchen towel.
v Meanwhile mix the shredded coconut along with chilly, salt, thoroughly.
v Mix the chopped onions, along with coconut mixture and roasted bitter gourd pieces.
v Serve immediately.
v Do not keep for long as if the bitter gourd loses crunchiness it will not taste good.
Note: U can even microwave the bittergourd for tht u just got to do this:
Take a microwave safe glass plate and add the chopped bitter gourd pieces. Sprinkle some salt and oil and microwave for 3 minutes. Remove the plate and toss some more oil on it . Microwave for another 2-3 minutes. Make sure the pcs are evenly roasted.

A twisty Salad

Hey guys hope all ya enjoyed the weekend!!!  Saturday was total fun nd Sunday it was more of rest :P.

The weather isn’t tht good. Its rainy cloudy nd sometimes sunny too…… I hate such a moody weather….
I always love salads in any form…. I sorry we can eats bowls nd bowls of salads…skipping my food….
So here is something more in our normal salad….. how about fruit??? Oranges cooool isn’t it?
SO here is the simple recipe for the salad

2 cucumbers peeled and chopped
2 tomatoes washed and chopped
2 onions peeled and finely chopped
2 oranges peeled and deseeded and cut into small pcs
1 green chillyalit into 2
Juice of half lemon
Salt to taste
Coriander leaves washed and chopped finely
Method:
Add all the crunchy veggies in a salad bowl…. Now add salt,green chilly, and lemon juice and mix well… add Orange and coriander leaves at the end and toss well…..
Healthy salad is ready to serve.

Lovely Corns

PhotobucketI always keep saying that my hubby is a Bumper Jackpot for me............or i can say a Alladdin’s Ginnie I open my mouth for something its always ready...........As i told last time My sweety cooks for me atleast once a week sometiiiiiiiiiiiiiiiiiimes twice thrice.......... His first question will always be Kasa Khatta??(what wil u eat??) nd my answer Kasane jatta laik jallari jalle...(anything tasty)....this weekend was the same version.......but he adds telling wht u’ll eat?? i’ll eat fish fry......nd he decides to cook some corn for me. This time i cooked the fish for him i even *touched* the fish n all.atlast comes the turn of my corn...........

Photobucket without much a do i start with the most simple corn recipe. Here’s it.

Fresh corn kernels – 1 big bowl

Italian seasoning -1 tbsp(rosemary,basil,oregano)

Garlic powder – 1 tbsp (if u don’t find it then add finely chopped garlics almost 10)

Olive oil – 1tsp

Lemon juice – 1tsp

Salt to taste



Method:

Heat a pan add olive oil..corn kernels..........garlic powder..Italian seasoning..............salt and stir for 5 minutes then at last add lemon juice and switch off the flame.

Add ur love into it and serve hot.

U can enjoy the crunchy corns.

Pachodi and Panak On the Occasion of RamNavmi

Did all ya enjoy ur Long weekend??? We did… enjoyed a lot… but now m suffering from severe throat pain… nd head ache… it feels like someone has kept kgs of weight on my head ….. LSigh!!!! Leaving all those things apart let me come to today’s post… I know M pretty late in posting this… Nd yeh last nyt when I was chatting with my blogger fren Nithya she too told me the same thing its pretty late for this yr nd too early for next yr… Ne ways its better late than never A’int it????

As I grew up in temple premises I know what they serve on which occasion :P. On A note we have our own family temple and that’s y I know… :D

I remember when they used to serve Prasad we used to be the last ones to go there and receive it and that’s becoz we knew tht it wud be remaining at home :D…. but when it comes to Panak nd Pachodi we wud be the first ones to run as we knew there wudn’t be ne thing remaining at home :D… Pachodi was always served very lil nd it wud be a tbsp….. but I wud always call them back nd tell “Makka He Swalp Chada Jai”…. :D (I.e. I need this one a bit more)…. Awwww those were the days….

Amma was here for almost a month’s time so I was craving for Panak nd asked her to make this for me… As soon as she prepared it Both of us(DH nd I) drank glasses of Panak…. Nd enjoyed it to the Core…

Here is the recipe of the soothing panak

4 tbsp grated Jaggery

2 glasses of water

Juice of half lime

1” dry ginger (shoonti)

7 -8 peppercorns

1 cardamom

Method:

Grind dry ginger, pepper corns and cardamom into a fine powder.

Mix this powder along with water and jaggery , mix until jaggery dissolves.

P.S – U can make the powder in a large qtty and make panak when u feel like quenching ur thirst.

U can use the same powder as kasahay…. i.e. u must take a tbsp of this powder and add a glass of water and reduce it to half glass and strain it Add hot milk (1/2cup) and drink it hot… This is good for Cough nd cold.

Now for the Pachodi

We need

Cucumber Finely chopped – 1 cup

Raw Mango finely chopped – ½ cup (make sure mango is not too sour)

Coconut -1/2 cup

Green chilly finely chopped -1

Ginger finely chopped -1”

Salt to taste

Method :

Grind coconut, green chilly into a fine paste. Now Add cucumber,mango, ginger and salt in a bowl toss it and add the paste In it.

Mix well.Pachodi is ready to serve.

Ugadi Celebrations and A Beautiful Evening



SIGNIFICANCE:
It is believed that the creator of the Hindu pantheon Lord Brahma started creation on this day - Chaitra suddha padhyami or the Ugadi day. Ugadi name has been changed from Yuga Aadi(Yuga + Aadi means "Beginning of New age").Ugadi is also the most auspicious time to start new ventures. And they will take Jaggery and Neem leaves because Jaggery represents joy and happiness and Neem leaves represents sorrow. Also the great Indian Mathematician Bhaskaracharya's calculations proclaimed the Ugadi day from the sunrise on as the beginning of the new year, new month and new day. The onset of spring also marks a beginning of new life with plants (barren until now) acquiring new life, shoots and leaves. Spring is considered the first season of the year hence also heralding a new year and a new beginning. The vibrancy of life and verdent fields, meadows full of colorful blossoms signifies growth, prosperity and well-being. With the coming of Ugadi, the naturally perfumed jasmines (mogra) spread a sweet fragrance which is perhaps unmatched by any other in nature's own creation! While large garlands of jasmine are offered to Gods in homes and temples, jasmine flowers woven in clusters adorn the braids of women. Ugadi is thus a festival of many shades. It ushers in the new year, brings a rich bounce of flora and fills the hearts of people with joy and contentment!
PREDICTIONS FOR THE YEAR
Ugadi marks the beginning of a new Hindu lunar calendar with a change in the moon's orbit. It is a day when mantras are chanted and predictions made for the new year. Traditionally, the panchangasravanam or listening to the yearly calendar was done at the temples or at the Town square.

Ugadi is celebrated with festive fervor in Maharashtra, Karnataka and Andhra Pradesh. While it is called Ugadi in A.P. and Karnataka, in Maharashtra it is known as "Gudipadava".
It was my first Ugadi after marriage. Since so many years I celebrated Ugadi at mom’s place, even this year v had to celebrate it there as it was Nave Parab(New Festival). But as I was here I celebrated it with my luvly Hubby. Nave Parab means the girl and her husband visit the girl’s house there her parents welcome both and show Aarti, give gifts to both, and serve delicious food overall they get a royal treatment.
At 6.30 AM struck the alarm & I got up lazily (here I m not used to get up early on weekend). As it was a new year I wanted to start my day early. We had a tea feeling the fresh air in the gardens and then came bac home and I cleaned our house & then I came fresh after a hot shower. We ate neem and jaggery after our prayers. For our breakfast I just had vermicelli upma. Then I started with the lunch preparations. Once I finished all the preparations we offered the food to god and then had a good lunch on plantain leaf. I must say a heavy coconut milk sweet not only fills ur tummy but makes u feel dozy. So had a small nap. Evening Outside the window was the hiding sun. A romantic evening.
Just above i spoke about the royal treament and we got it online V just missed the lunch there but my mom showed us the Aarti when we ver online in skype and we got loads of blessings for our coming years. There cud never be a best gift than this.
The beautiful evening went on by going to trendz to buy clothes (there was 90 % off), but who knew the shop itself was 90% off nothing in store. What wud v buy there when nothing’s there so we came out nd decide to move elsewhere and ver waiting for a taxi and then we got one where the driver spoke so well about many things may be about marriage, shopping, about Pakistan or the biryani they get there. He was so happy seeing us together. We were actually planning to go some mall near by. But he told my hubby y don’t u take ur wife to some other mall vch is very good one. Then we traveled all the way to Red Sea Mall. After shopping back home and the whole day went happily.
PREPARING FOR THE OCCASION

Preparations for the festival begin a week ahead. Houses are given a thorough wash. Shopping for new clothes and buying other items that go with the requirements of the festival are done with a lot of excitement. We Amchi's prepare Ambe upkari, kosambari, chane ghashi varities of Podi(fries), Bibbe Upkari( tender cashew upkari), daali toy. We never get tender cashews here and i nvr prprd daali toy as i had ghashi.
Kele Podi & Surna Podi:
Kele as we call it in Konkani and in English we say banana. For this we use the Indian Banana which is orangish in color. In Konkani we call this as Nendra bale kele. This bananas are famous in Kerala. It can just be steamed and can be eaten for breakfast, it tastes yummmmmmm.
We need :
1 big Banana
Coconut oil for frying
Salt to taste
Rice flour for coating
Peel the banana and cut into 3” piece and then slice them half again. Marinate these with salt to taste for leave it for an hour. Coat these with rice flour. Heat oil and fry the coated banana till they are soft.
Surna Podi:
Surnu in Konkani, Elephant Yam in English, Senai kilangu in Tamil, whatever u call it & however u cook it its just delicious.
We need:
Surnu peeled and sliced – 15 -20
Rice – 1 cup (soaked in water for 2 hrs)
Red chilly – 7-8
Salt to taste
Method:
Grind the soaked rice with red chilies into thick and fine paste (add as much less water as possible). Apply this paste to the surans and make sure to cover it all over, and keep it for half n hour. Then fry in hot oil and remove when crisp.

Chane ghashi with Kadgi:
Here’s what we need-
Brown chickpeas (chano): ½ cup (soaked overnight)
Raw jackfruit cubed -1 cup ( I usd canned ones as here v never get fresh ones)
Red chilies -5
Rice -2tsp
Fresh coconut scraped– 1 cup
Mustard seeds -2tsp
Tamarind – a small piece
Curry leaves – 8-10
Oil -2tsp (½ tsp for frying nd 1.5 tsp for seasoning)
Method:
Cook channa in cooker and get 5 whistles. In a vessel add cubed jackfruits in enough water nd boil for 5 minutes( as it is cand no need to boil for long). Then add channa, salt and keep it on sim. Fry the rice in ½ tsp oil. Fro the gravy- grind coconut fried chilies & tamarind, when done coarsely add fried rice and grind into a fine paste. ( we add rice for the gravy to thicken) Add this gravy to the channa nd boil until bubbles. For seasoning- heat oil add mustard seeds when splatters add curry leaves & season it on ghashi. Remove ghashi from flame .

P.S: during fasts instead of rice u can add semolina rawa, but without fryng or grinding.
This goes well with white rice or boiled rice, and chapathis too.
Ambe upkari:
Mango is our family favorite I can say. It was since years my hubby ate this he said. As it was Ugadi spl I prepared it. As I had prprd only for 2 I used only two mangoes.
We need:
Ripe mangoes – 2 ( no need of the best Qlty ones)
Maida( all purpose flour)- 1 tbsp
Jaggery – ½ cup
Green chilly – 1
Red chilly-1
Urad dal – 1 tsp
Mustard seed -1tsp
Curry leaves -6-7
Salt to taste

Method:
Peel mangoes and transfer in the vessel in vch u r going to prepare upkari. Do not throw the skin instead remove it in a bowl add water and squeeze ot the juice. Add this juice to the mangoes. Add jaggery, salt, slit green chilly and keep on flame for it to boil. When the mango turns pulpy add the maida paste (mix maida in water to a fine paste) stirring continuously without allowing it to form lumps. Heat oil add urad dal, mustard seeds and once they splatter add curry leaves and cut red chilly. Season this on upkari and remove from flame.



Ras Vado:
This is eaten with any kind og coconut milk sweet. I was not to prepare this but Mayi(MIL) told just prepare it for custom.
We need:

Rice flour – 5 tbsp
Coconut milk powder- 2tbsp( can use coconut milk instead of powder)
Salt to taste
Jeera – 1tsp (which I forgot)
Oil for frying

Method:
Mix rice flour, coconut milk powder, jeera, salt to taste with water into a thick dough.
Make 3-4 balls, oil ur hands and flatten these on banana leaves or plastic sheet.
Remove one by one and fry in oil until crisp.



Madgane (Channa Dal sweet with coconut milk):
Channa Dal – 1 cup
Coconut Milk -1cup
Jaggery – as per ur taste
Cardamom powder- 1 tsp
Cashew nuts- 10 cut into small pieces
Rice flour – 1 tsp( make it into paste by adding little water)
Ghee – 1tsp

Method:
Boil channa dal until soft. I put these in cooker nd tool 3 whistles.
Add water in coconut milk powder to thick milk consistency.
Transfer the channa dal in a vessel add coconut milk, jaggery and boil for 10 minutes.
Then add rice flour paste and mix this in the godshe(sweet), add cardamom powder and boil it till it bubbles.
Remove from flame.
Heat ghee add cashews and fry. Add these cashews in godshe.
This ends with my preparations for Ugadi & we enjoyed the food on banana leaf and had a feeling as if v ver in Mangalore.

Kosambari- A South Indian Salad/ ಕೋಸಂಬರಿ

Kosambari (South Indian Salad):

Since a week we are to light dinner. Light Food Is In the Air! Soups or Salads would always fill our stomach. And we are game! Here my friend always looks at our food and has to say ‘U people eat like birds’ even our parents say the same. Light food because the breakfast and lunch we have gets heavy. In my previous posts I have mentioned about my love to raw nd crunchy veggies. So I pride to post some crunchy salads.

Carrot Kosambari:
Grated Carrots – 1 large bowl
Moong Dal (Soak for 2 hrs)
Chopped coriander leaves -1tsp
Lime juice – few drops
Fresh scraped coconut -3 tbsp
Mustard seeds-1tsp
Oil -1/2 tsp (I used coconut oil as it tastes good)
Curry leaves – 7-8
Green chilly -1
Salt to taste

Method:
Add carrot, coriander leaves and soaked nd drained moong dal in a bowl.
Heat oil in a pan add mustard seeds& curry leaves and fry until curry leaves turns crisp allow to cool (seasoning).
In another bowl add coconut, chopped green chilly, lime juice, salt, chopped coriander leaves and seasoning and mix well.
Add this seasoning to the carrots and mix well.
Now Crunchy Kosambari is ready to Crunch.

If u replace carrots with chopped cucumbers it turns out to be Taushe Kosambari.

Beetroot Kosambari

For me or say us eating A big bowl of Salad is equal to a full meal :P
But these days I have my lunch as well as a Big Bowl of Salad….
This is a Simple salad which can be made easily and is just Superb.
Beetroots are rich in iron & other minerals. Beetroots are very good to relieve constipation & are very good for obesity. Its fibre contents promotes healthy cholesterol levels, helps to build red blood cells.

Here is what we Need:
  • 1  large Beetroot
  • 1 Medium sized onion
  • 1 Green chilly
  • 1/4 Cup of coconut
  • Small piece of lemon
  • Coriander leaves for garnishing
  • Salt as per taste
Method
  • Peel and Grate the beetroot and keep aside.
  • Then add coconut, green chilly(chopped) to the beetroot with little salt & mix well.
  • Chop the onions finely & add to the beetroot mixture.
  • Squeeze the lemon & add salt as per taste.
  • Finally garnish the salad with coriander leaves.
And Serve.

Nice Rice


You say tabbouleh, I say tabouli, we all loved that bulghur wheat salad, but a delicious substitute is the following rice salad, adapted from the Tabouli Recipe in “Moosewood Restaurant: Low-Fat Favorites” by the Moosewood Collective. Here’s our version:

Middle Eastern Rice Salad

3 cups cooked rice
1/3 cup lemon juice
2 small cloves of garlic, pressed
1 cup chopped Italian parsley
4 scallions, chopped (I substituted ¼ cup finely minced red onion, in summertime I would use the chives in my kitchen garden)
Handful of grape tomatoes, halved (so they don’t spit you or a friend in the eye when chomped)
Chopped fresh mint or 1 tsp. dried mint
Kosher salt and pepper to taste.
A couple of splashes of extra virgin olive oil

Ideally, you make your rice right before you mix in the dressing so that the rice grains suck it up better, but cold leftover rice will do. Mix all ingredients together and let flavors mingle at room temperature for several hours. If salad seems a little dry, splash in some rice wine vinegar and maybe a little more olive oil.

Feta cheese, black olives, dill, and chick peas can be added to vary this salad.

A good party dish, particularly for summer gatherings, as it can be left out for hours without spoiling.

Serves 10-12.
