Karibeva Pitti

*Karibevu* Curry leaves ar used in most of the South Indian dishes…so here I have something using tht…..I have always tasted chutney pitti vch amma nd mamama( mom’s mom) made never thought of trying though as I m not fan neither AC of this…:P.

But my hubby is sumwatfond of this……I add sumwat bcoz he can have it once until its empty next time I say shall i….I m sure il get the answer no….u just made it some time bac :P.

He has been telling to do this chutney pitti from such a long time nd I was taking it off my ears…….yest I just felt lemme do it for him as he is asking me so much…..so without much of a chick pick I did it….Phew!!!!!.......I wont feel bad any more :P.

I have a Jaya. V. Shenoy book I reffered tht nd even asked my mom….even referred Divya’s blog. Nd about Jaya.V.Shenoy’s book m sure most of the konkani’s have it vth them……..she has all the Konkani recipes A-Z……Nd u kno the best part is My hubby got tht buk when he came here…afterall he had to cook…..Most of the gals when they get married carry this buk( luks it’s a must) vth them……he he he I too bought it (though I knew cooking I got it bcoz if I burn my hands I can rely on this buk :P).

Ok now to the recipe

I used:

Dry coconut/copra/kobri/dessicated coconut –1 cup

Red chillies – 15

Tamarind – a small ball

Curry leaves – 12-15 springs

Channa Dal – 1 tsp

Salt to taste



Method:

Dry roast all the items except for tamarind nd salt.

Now grind all the ingr….including tamarind and salt into a fine powder

Cool it nd store in a air tight container

Remains fresh for more than a month….you can even store it in fridge remains fresh for long time.

Nd to add it tastes Yum with Pej/Konji/Ganji, tastes gud vth idli,dosa too.

Bitter Can Taste Better or can say best?????

How r all u guys???? Weekend is nearing……..So I thought get out of diet tht day??? How about something fried? Something bitter? r’nt u tired of sweet always or the same taste………I m so thought I’ll makw something better or best out of bitter…….Have u ever had drumstick leaves ambado (fritters)…..no then do try it it tastes yum nd ul never feel the bitter taste……….Amma used to make them at home(mamama used to get the leaves for us) and I used to cherish them sitting like a queen with a plate of ambado….huh I remember the time when Sud..nd I used to fight for the ambado’s telling takka/tikka kasane chada dilla nd all(y is he/she given lil more). I miss tht bro!! L but after all tht its life….we gona go far…..

Today I m gonna post ambado nd karathe phodi(karela/bittergourd) :

Mashinga palle Ambado :

Mashinga Pallo/ Drumstick leaves – 2 cups (coarsely cut with hands)

Rice-1 cup (soaked for 4 hrs or so)

Red chillies – 12-15

Salt to taste

Method: Grind rice,chillies, into a very fine and semi-thick paste.

Now in a bowl mix the leaves, salt, and the paste.

Heat oil….now make small balls nd flatten them deep fry in oil and Relish.

Karathe Phodi:

Karathe/Bitter Gourd -2 Rice - ½ cup Red chillies – 9 Salt to tasteHing a pinch

Cut roundels of karathe and apply salt and leave for n hr.(this removes the bitter taste of karathe thts wht amma used to tell me).Grind RC, Rice and hing into a thick paste(avoid adding lozza water).Now squeeze the water from karathe and apply the paste and rest for ½ n hr….Then deep fry them until crispy.

Now u can relish the bitter which is not bitter…..he he he he he he he.

Taikile Khadi

I remember those variety of Kadi’s which Mamama(granny) and Amma prprd and I always relished them… My last post was Taikile Chutney so I thought y not post something of tht leaf itself and made kadi…. Which is very simple and yum….   

Taikilo (cassia leaves)  are found during rainy season and there r varities made out of this leaf. JJJJJJJ

So here is Another Variety  Taikile Kadi
First prepare Taikile  Chutney. The recipe is HERE.
Then add water to liquidize it (don’t make it too watery)
Add salt if required as we add salt to the chutney already J.
Now boil this well until u get 2 bubble boil.
Heat A tbsp ghee or Oil. Add crushed Garlic ( I add lots as I love Garlic) and fry until done .
Now temper it on the Kadi
Serve with Hot Rice.

Taikile Chutney

A good Memory to go with this Chutney…. During those kiddo days I  remember my mamama(mom’s mom) making awesome chutneys of variety of leaves and they used to to taste Heavenly and we(aunt and me) used to relish it so much tht now We(pachi n me) miss it like crazy. She used to grind it on the grinding stone and not the mixer grinder(it wasn there then :P) and tht smoothness wud never come if ground in mixer. But now as mamama is old nd doesn use the stone I don’t get to eat such chutneys… but without forgetting Amma makes it for me now grinding on the stone(on spl request J ) and I relish it.
It so happened that when I was in Mangalore Suma had come down to my place with her sweet lil daughter Smera and I remember her relishing this chutney and telling Amma tht its very tasty J J J. She literally enjoyed it and my mom was very happy.
Not to forget Suma had got me some sweet goodies…. Which was Yummm and she even got mango pickle which was lip smacking J J J.
I cud not get a click when i was in mangalore... and when I came bac here i was lucky enuf to find it in the marketJJJ Soon I made this chutney and m posting it now 
Now Facebook has various food site in vch Konkani Amchi Food is one. There we find Yummy dishes and get various information about food and ancient cooking. 
I heard the Taikilo is also known as Negro Coffee…  and the information was Given by Pravin D Kamath maam  from KAF and was found in Ashwini’s Blog.
The first picture is mine it is after removing the stems of the leaves. 
And the second picture(the bunch in hand is Taikilo) is contributed by Pravin maam. Thank U so Maam.


Now ok after so much of this and that here is the recipe for chutney
1 bowl of washed  and drained taikilo
½ cup of scraped coconut
2 tsp of jeera/cumin seeds
Red Chillies – 3
Tamarind a small piece (may be a slice)
Ghee to fry – 1 tbsp
Method:
Heat a pan add ghee and add jeera, red chillies and  coconut and fry till the coconut is semi roasted. Now add  the taikilo leaves and fry until leaves have  changed their color.
Allow it to cool down and then grind it with tamarind into a fine paste.
Transfer it into a bowl add salt and mix well.
Taikile Chutney is ready to Serve.
This chutmey can be made into kadi too… I will post the recipe soon.

Serve this chutney with dosa or have it as a side for Rice.
Its simpley superb.

MONSOON MAGIC RECIPE #1- GAJBAJE

Remember my last post where I spoke about monsoon magic???? Yeh u heard it right the next few posts will be related to Monsoon vegetables. The vegetables or fruits that we get during Rainy season!!!!  
 Yeh It’s raining for a couple of days already. Watching the rain brings back some childhood memories. Wow! I feel like ancient saying that. I remember when I was a young girl back in Mangalore I loved jumping around in my shorts in the muddy water, making paper boats and putting them in the rain water, coming back from school having a hot Cup of filter coffee biscuits or bonda’s or anything tht my mamama (till I was 10) and Amma(later on) prepared for me J.
Ah!!!!! I miss those days yep the school days where we used to put back our umbrella’s in the bag drench in the heavy rains splash our legs in the muddy water, or just arrive 5 minutes late during the assembly all becoz the bus was not on time becoz of the rains!!!! Yes the Rains!!! I love it!!!! I not here in Mumbai but back in mangalore the rains here are horrible sorry the roads and the muddy water is horrible rains r the same everywhere isn’t it??? LOL
I love the monsoon veggies Do u???
My Mamama always tells us that during her childhood she never even saw Beans, or Cauliflower…… can u believe it?  The vegetables what they saw was Magge(yellow cucumber) bamboo shoots, colocasia  leaves n so on….
Now we have so many vegetables yet I find there’s a lesser variety!!! ;)

Last Monday was Ashaad Ekadashi and during that day we fast the whole day. Our Amchi fast Is filing the stomach with lots of varieties but no onion garlic or anything made of rice and outside food. Sometimes I feel is it a fast??? Its feast ;).
On Ashaad Ekadashi we make Gajbaje(this is made with all the monsoon vegetables) and its so yummy that I wait for rainy season just to eat this dish sometimes……
So here is today’s Monsoon Magic Recipe #1 – Gajbaje ( I have posted the recipe earlier but they did not have few items in it as I was out of India now that I m here I m posting the recipe in detail with all items in it J)

What we need:
1cup magge pieces,
1cup yam(suran)pieces,,
1 cup tender breadfruit pcs
3-4 any thick green bhaji stems/green amaranth stem(denthu)
2 cups  ganti(patrado panna ganti/colocasia leave knots approx 20),
1 potato cubed,
1 cup tender bamboo(kirlu)pieces,
1 raw banana deskinned and cubed
Curshed and deskinned jackfruit seeds/bikkand  -25
Hog plums/ Ambado-4-5 crushed
salt

The Method to make Ganti/colocassia knot is shown below

To grind
1coconut scraped approx 2 cups
1 roundi red chillis(whole)
2 tbsp roasted urad dal
little oil,(coconut oil,)
1tspoon mustard seeds(rai)
tamarind 2 pea sized
kadipatta/curryleaves

Method:

1. Take little oil in a pan ,fry urad dal till little brown ,add whole red chilles.fry for few seconds.
2.Grind grated coconut,tamarind, & above fried urad dal&red chillies
3.in pressure cooker add all  hard vegetables and  once a whistle comes switch of f the gas and when cools down and then add the soft vegetables and pressure cook for a whitsle more switch off gas after .(you can cook vegetables in the vessel instead of cooker).
4. Add ground coconut masala in it & boil it till it get mixed with all vegetables.
5. Make tadka of oil, mustard seeds ,& curry leaves. Add it in above curry. Curry should be semi dry .

A twisty Salad

Hey guys hope all ya enjoyed the weekend!!!  Saturday was total fun nd Sunday it was more of rest :P.

The weather isn’t tht good. Its rainy cloudy nd sometimes sunny too…… I hate such a moody weather….
I always love salads in any form…. I sorry we can eats bowls nd bowls of salads…skipping my food….
So here is something more in our normal salad….. how about fruit??? Oranges cooool isn’t it?
SO here is the simple recipe for the salad

2 cucumbers peeled and chopped
2 tomatoes washed and chopped
2 onions peeled and finely chopped
2 oranges peeled and deseeded and cut into small pcs
1 green chillyalit into 2
Juice of half lemon
Salt to taste
Coriander leaves washed and chopped finely
Method:
Add all the crunchy veggies in a salad bowl…. Now add salt,green chilly, and lemon juice and mix well… add Orange and coriander leaves at the end and toss well…..
Healthy salad is ready to serve.
