Asparagus Duo Soup with Veggies nd Mushrooms.......Slurp

A months time off from blog…nd now m bac… I Hope U guys haven’t forgotten me…If ya have then I u guys better refresh ur memories….. M bac with a hot soup….

I guess all in mangalore have forgotten tht there is a season called winter……Winter starts from oct nd is on till Feb…… But these days its just 2 seasons there Summer nd Rainy season….nd winter season has also changed into summer nd rainy season….Its burning hot during the day nd heavy rains pouring after 7……Thunder Lightning Ahhhh M afraid……..But apart from all this what I loved in mangalore was the Love I got from all….. My Family and my frenz….I enjoyed Amma’s food…….Mayi’s Sambar….Nd I too cooked sometimes :P…..

When it comes to frens the first one who met me when I came was V, he made me laugh to the core….. Then a bunch of frenz…in blore Sandy,Durga,Madhu,Niru…Miss ya all.

I enjoyed Rasamalai….. made by Uj, Aamras made by Suma.

I met Suma my Blogger fren…..nd had a Gala time. Suma was a sweetheart she treated me with my fav’s Aamras, Kaaju Katli(double dessert I can Say ) and Vada. I enjoyd tht day. Her daughter Smera was such a darling I just loved speaking to her. Suma’s in laws nd her Parents too everybody treated me one among them.

I hope to meet ya soon…. Nd wish to meet many more blogger frenz.

Its been 2 days in the New place...The weather is really pleasant. I m trying to get along with things…

Is the weather cold???? Then y not try a hot soup…..A readymade soup with a twist will do??? Yeh y not…if u feel lazy to cook then this will obviously do…..

We need:

A pack of soup powder- I used Maggi Asparagus Duo… U can use ne one of ur choice..but if u find this one then do try it once.

Vegetables thinly sliced ( carrot, beans, onions, mushrooms, and sweet corns) – 1 cup for 1 packet

Italian seasoning

Salt If required

Butter 1 tbsp



Method:

Mix the soup powder according to instructions.

Now In a bottom pan add butter when melts add all the veggies nd sauté it.

Do not over cook the veggies, keep them crisp.

Now add the soup mixtue and stir well.

Add more water if required.

At last add Italian seasoning ½ tsp.

Add salt if required and Serve hot.

Broccoli Soup

Its been long time I blogged…. I m a kind of busy these days.. but if one asks me doing what I haveno answer….. :P
May be I have turned  to be a bit lazy…… :D… Ok for a lazy dizzy evening how about something quick and easy or say something very healthy and which can be made in a jiffy ?????
So here is a healthy soup Photobucket

What we need and how to make :
Broccoli – 1 (wash and remove the florets)
Onion – 1 finely chopped
Garlic – 3-4 finely chopped
Milk - 1 cup
Water - 1 cup
Salt and pepper to taste
Butter – 1 tsp
Italian seasoning as per taste

Method

In a deep bottom pan add a tsp of butter and sauté onions and garlic.
When the they turn golden brown add broccoli florets Italian seasoning (a tsp or less)and fry for 2 or 3 minutes
Add 1/2 cup of water and let it cook for 5 minutes.
Switch off the flame and allow it to cool
Blend in the mixer into a fine puree.
Put it back into the pan add milk and cook it for another 5-10 minutes.
Add salt and pepper to taste.

Tomato & Beetroot Soup

Its been raining cats and dog and today is the third consecutive day…. Then we got to eat or drink something Hot??
Me:  Will u eat ne thing fried….. I will do it for u if u need…. M not much interested though :D
G: No even me not interested in eating ne thing…. Shall I make something??? Soup….
Without a second thought Me: yeh yeh if u make it il be more happy :P
G: Tomato soup???
Me: Let’s add something more in it?
G:  more what??
Me: Beetroot is getting stuck in the fridge… so let’s empty that…
G: ok but u need to tell the method… OK…
Me: Done… I will tell ya the method and u make it….
Soon he goes into the kitchen chops all the veggies and waits for me to continue.
And I continue… and he makes the awesome soup…… J J J

So here is what we need:
3 Tomatoes (big sized) fully ripened and chopped finely
1 beetroot peeled and finely chopped
2 onions finely chopped
Salt to taste
Italian seasoning (few)
Mint leaves few
Pepper powder to taste
Butter – 1 tbsp
Method:
Heat butter add finely chopped onions and fry them till slightly burnt… (that doesn’t mean u got to burn them… just roast them bit more than regular).
Now add tomatoes and sauté till its mashed.
Add beetroot and ½ cuppa water and cook the  beetroot…
Once done add mint leaves, Italian seasoning and fry for 2 more minutes.
Allow it to cool down and then grind them all together and make it into a smooth paste.
Remove it in a bottom pan and add the paste and water to liquefy the soup….
Add salt and boil until it gives good bubble….
Switch off flame and add pepper powder….

Vegetable Manchow Soup

Vegetable Man chow Soup is made from vegetables and Chinese chilly chutney/ sauce. Our soup recipe section an assortment of tasty and easy to make. Soups from integral parts of any diet act as a appetizer. They r nutritional as well as stimulate ones hunger. So one need not pounce like a tiger on any body. :P. This Indo Chinese soup we tasted a week back in Village. My hubby really needed such a soup that day as he had caught cold. The soup was tangy and gingery. Uffff! At last his cold was off on its permanent vacations. Every time I keep thinking wat shall I prepare today? This time I remembered about the Man chow Soup… but I never made it so gingery… no one had caught cold :P. I hadn’t prepared it since years… so wasn’t confident if it would taste gud. But God! It did taste well and we had it slurp!!!!!!!!.

Here is what I used:
8-9 Mushrooms sliced, 1 Carrot finely chopped, 4-5 beans finely chopped, few spring onion greens finely chopped, 1 onion finely chopped, 1 tsp ginger garlic paste, A small piece of ginger finely chopped, 1 green chilly slit, 2 tbsp chilly sauce, 1 tbsp soya sauce, 2 tsp vinegar, 1 tbsp corn flour, 2 tbsp Butter, salt to taste.


Method:
Heat butter in a bottom pan, Add ginger garlic paste and fry until raw smell is off. Then add chopped onions and ginger, chilly and sauté. Add all the veggies, and fry do not over cook them. They must crunch. Add water as required and mix well then all the sauces, vinegar and salt to taste. As it is boiling make a paste of corn flour and mix it in the soup and allow it to bubble once bubbled remove from flame serve hot HOT.
P.S: U can add fried noodles also when serving.

Cool Cucumber Turns Hot!!

Ah!! Cucumbers love it any time. Probably u opt me cucumbers or have a simple lunch/dinner we would prefer cucumbers first. Anything with cucumber would do for us. Those were the days of school where I never missed cucumber and tomatoes in my lunch box. A saaru (rasam), sheeth (white rice), cucumber salad or slices was my perfect lunch. If I never had them in my lunch OMG I used to come home and used to start telling ‘Amma aji itya taushe na?’ and my face would fluff. Anu used to make it sure he gets cucumber ne time he went to market. And in school everybody knew what would be in my lunch box. Miss those cool days. Once I entered college NO LUNCH BOX NO CUCUMBERS everyday because I had to rush and had no time to slice them. But I made it a point to eat them regularly. Ok ok I’ll turn off from school, college & come back to my recipe. As I was starring at these cool ones there stroke an idea how about making these cool ones Hot?? I horrored these cucumbers with sharp knife & got them into pieces then decided for a soup! What say? Amma never thought cucumber soup wud taste good but hmmmmmm it did! And from that day on I love these Cool ones Hot.






I miss Gaunche Taushe (the one we get in Mangalore). Any cucumber is Tain Tain Fish in front of these. But what to do after all its cucumber I have to compromise. Now that I started cooking after 3 days of rest (though I was not well I was on Cloud 9 as my sweet hubby was cooking for me) I decided to have something cool but hot & that was Cucumber Soup. Slurp! I love it. Here also my hubby dear lend a hand bcoz i wasn’t the old Aps( was still a bit feverish). Any ways after the entire story I pen down my recipe.


Here is what we need:
Cucumber -3 if small(or 1 large)
Onion -1chopped
Coriander leaves- few strands
Basil/Tulsi leaves – almost 10 leaves or say 2tsp
Garlic – 2 pods
Salt to taste
Pepper powder – 1tsp
Butter – 1 tsp
Corn flour -1 tbsp

Method:
Heat a pan and add butter.
Then add minced garlic, onion & fry until soft.
Add chopped cucumbers (peeled), basil leaves/tulsi, salt pepper powder & fry for 5 minutes (do not add water).
Remove from flame & allow it to cool.
Once its cooled grind into fine paste by adding corn flour.
Remove it in a pan heat and add required quantity of water.
Get it to boil and then serve hot.
Soup is ready to Slurp!
P.S: If u catch cold then u can add little more tulsi leaves and have this soup as it is really good for cold, but reduce qtty of cucumber (they tell cucumber is cold but not when heated) and increase the qtty of tulsi.

A Soup Filled with Love


Truely this soup is filled with loads of love.
I was stuck to bed from last 2-3 days because of weakness (still don’t know why !!) The first day I was so weak that I couldn’t manage to stand. Its hubby darling who did all the cooking before he went to office.As soon as he realized that I couldn’t manage to even get up from bed …he came back from office to take care of me …in the afternoon he cooked konji. In the evening he made fresh orange juice for me.Whole day he was with me and took care of me. In the evening I wanted to have a hot soup so that I feel energetic…hubby said he will make it but he didn’t know to make one and the next question which soup? He took a look inside the fridge and said nothing except “PUMPKIN” !! I said pumpkin soup will be nice to which he reacted …yeeeeeeeeeks…Later he agreed to make the soup as below
Ingredients:
2 bowls of chopped pumpkin
1 full chopped onion
1 clove garlic chopped
1 t spoon butter
1 table spoon corn flour
50 ml milk / cream
A tsp of pepper
And salt as per taste
Method:
Fry the chopped onion and garlic in butter till it changes color then add chopped pumpkin to it, fry it for while till turns pink. Now add milk. Heat it till pumpkin becomes soft.After cooling this mixture grind it fine with salt, pepper and corn flour.Finally add enough water and boil it.Serve it hot with a basil leaves / mint leaves.
After tasting this soup my hubby’s reaction changed from yeeeeeeeeeks… to yummmmmmmmmmmmmyyyyyyyy...
