Tomato & Beetroot Soup

Its been raining cats and dog and today is the third consecutive day…. Then we got to eat or drink something Hot??
Me:  Will u eat ne thing fried….. I will do it for u if u need…. M not much interested though :D
G: No even me not interested in eating ne thing…. Shall I make something??? Soup….
Without a second thought Me: yeh yeh if u make it il be more happy :P
G: Tomato soup???
Me: Let’s add something more in it?
G:  more what??
Me: Beetroot is getting stuck in the fridge… so let’s empty that…
G: ok but u need to tell the method… OK…
Me: Done… I will tell ya the method and u make it….
Soon he goes into the kitchen chops all the veggies and waits for me to continue.
And I continue… and he makes the awesome soup…… J J J

So here is what we need:
3 Tomatoes (big sized) fully ripened and chopped finely
1 beetroot peeled and finely chopped
2 onions finely chopped
Salt to taste
Italian seasoning (few)
Mint leaves few
Pepper powder to taste
Butter – 1 tbsp
Method:
Heat butter add finely chopped onions and fry them till slightly burnt… (that doesn’t mean u got to burn them… just roast them bit more than regular).
Now add tomatoes and sauté till its mashed.
Add beetroot and ½ cuppa water and cook the  beetroot…
Once done add mint leaves, Italian seasoning and fry for 2 more minutes.
Allow it to cool down and then grind them all together and make it into a smooth paste.
Remove it in a bottom pan and add the paste and water to liquefy the soup….
Add salt and boil until it gives good bubble….
Switch off flame and add pepper powder….
