Laura Bush's Cowboy Cookies

I got this recipe from my Baylor roomie - Jennifer - not sure where she got it but we love it. Don't let the coconut scare you - makes these yummy cookies so moist. I have many try them and love them - even if they SAY they don't like coconut! Please try these - you won't regret it!

LAURA BUSH's Cowboy Cookies
3 cups flour
1 T. baking powder
1 T. baking soda
1 T. cinnamon ( i only used about 1 tsp.)
1 t. salt
1 1/2 cups (3 sticks) butter at room temperature
1 1/2 cups granulated sugar
1 1/2 cups brown sugar
3 large eggs
1 T. vanilla
3 cups semisweet chocolate chips
3 cups old fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans

Preheat oven to 350. Mix flour, baking powder, soda, cinnamon and salt in a bowl. In an large bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars, beat to combine--2 minutes. Add eggs, one at a time, beating after each, add vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. Dough will be stiff. Drop 2 Tablespoons for each and bake for 15-18 minutes.

* I didn't make mine that big or cook for that long - then you have more cookies to share :)
