This is the first day of school for our three girls. Annie is a junior and Jenna is a sophomore. They had to go early today to work Student Council and help the freshman. Meg is in 8th grade. All 3 have such different personalities and handle school in very different ways. I pray for a great year!
Breckenridge

We were supposed to go back to TEXAS for our summer gathering but my mom and brother talked me out of it. We were supposed to go to Six Flags but it was around 105 degrees so we planned a last minute vacation to Breckenridge. We have been there in the winter but never in the summer - WE LOVED IT! We hiked, did the Peak 8 fun park ( Meg has some nice elbow and knee strawberries from the alpine slide) and we went White Water Rafting. The temperatures were awesome. We also did some amazing eating - of course. If ever in Breckenridge - we LOVED Empire Burger and the cheese fries. We actually ate there twice. We had great pizza a Giempietros and a great meal at the Motherloaded Tavern. Daylight Donuts was highly recommended for breakfast but we never got up early enough. We did however manage to stop by Mary's Mountain Cookies at least three of our nights while walking around Main Street.
Hope everyone is having a great summer. It is still SO hot here in Omaha. I haven't been posting quite as much but I will try to catch up soon!
Just a few pics from our hike on McCullough Gulch Trail. I have more pics to share soon!

I just wanted to say Thank you for all of the prayers and support regarding my Dad and his recent battle with cancer. He did go to be with the Lord this last Tuesday, June 21st. We had driven from Omaha to East Texas on Sunday to see him because we knew he wasn't doing great. We had no idea that he was in his last days. I was with him, along with my mom and brother, during his final moments. It was a sweet but very difficult time. He wasn't in any pain!
I do have to mention the wonderful service that celebrated Dad's life. It was filled with humor and joy - just like Dad. My middle daughter and my husband sang, "Mighty to Save" and the pastor read letter/stories that the five grandchildren and I had written. I know Dad loved it!
I will be blogging again soon. I have eaten way too much since being in East Texas! I tend to be a stress eater. I have to say - nothing like a small town when it comes to taking care of your friends. The food and fellowship has been amazing! I heard a friend of the family recently say, "There is nothing like funeral food!" And.... she is right!
Thank you again for the thoughts and prayers! See you soon!

TEXAS Christmas

We love being with family for Christmas! We went to church on Christmas Eve and then Santa still found our teenage girls in TEXAS. We spent the day with family at my brother and sister in laws home. We had our traditional meal of turkey, ham, dressing, sweet potatoes, fruit salad, green beans, mashed potatoes, corn casserole, rolls and lots of desserts. Rob fried two turkeys - they were amazing. I always heard that once you have eaten a fried turkey - there is no going back! Mom made a pretzel salad for our fruit salad and it was a nice change. My cousin has small children and it was so nice to have the excitement of children on Christmas day. We are so blessed to have such a great family as we celebrate the birth of our Savior!

Update on Dad

Thank you so much for the prayers and thoughts for my dad. His surgery went well today. It was about 4 hours but the doctor thought they got all of the tumor. He has an incision over the top of his head from sideburn to sideburn. I did get to see him a couple of times in ICU when it was over and he looked better than I expected. They said his vitals were good and he would probably be out of ICU tomorrow. We are not sure of the treatment route just yet - waiting to hear what the oncologist has to say.
Thanks so much for continued prayers. I will be back in Omaha Thursday and hope to blogging some very soon.

Prayers for my Dad

My parents were here a week ago to see our Jenna in her high school musical. Dad wasn't doing great - moving slow, not focused, etc. Mom took dad to the doctor when they got back to East Texas and they found dad to have stage 4 lung cancer and a mass in his brain. I need prayers for the brain surgery Tuesday morning as they remove the 3 inch tumor from his brain. The tumor is in the best place possible for a tumor -we are just praying for a very successful surgery with no complications. My 2nd prayer is that dad is a genetic match for a drug they want to give him. This drug attacks only the bad cells in his body unlike chemo that attacks both the bad and the good.
His his still witty and giving the nurses a bad time. Everyone always loves "Potter". Potter is my maiden name but dad has gone by Potter for as long as I can remember. He is eating well and doing okay - we just need a successful surgery and for dad to be a genetic match with this drug.
I am flying to Texas tomorrow to be with everyone. I probably won't be blogging for a while or I may can sneak in a few while I am at my moms.
Thank you for your prayers and support! I Love my Dad!
Merry Christmas - from my family to yours!

Peanut Butter Pound Cake

Pound Cake

Our oldest turned 17 today - can't even believe. She didn't want chocolate so I searched for a different cake to try and I found this Southern Living recipe. The whole family loves pound cake and peanut butter so I thought I would give it a try. We were very pleased! The cake was very moist but I have to say that my favorite part is the frosting. Oh My! I only "drizzled" the frosting on so I had quite a bit left over. I put it in a separate container, and we enjoyed each piece of cake with a nice serving of extra frosting. This frosting would be great with anything - just by the spoonful! Our Annie LOVES frosting!

Peanut Butter Pound Cake (adapted from Southern Living Homestyle Cooking)
1 cup butter, softened
1/2 cup creamy peanut butter
2 cups sugar
1 cup packed brown sugar
5 large eggs
3 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup milk
1 Tbsp vanilla
Frosting:
2 cups sifted powdered sugar
1/3 cup creamy peanut butter
1/4 cup butter, melted
dash of salt
small can evaporated milk
Beat butter and peanut butter at medium speed for about 2 minutes or until soft and creamy; Gradually add sugars and mix; add eggs one at a time beating after each until yellow disappears - for about 5-7 minutes; Combine flour, baking powder, soda and salt mixing well; Add flour mixture to butter mixture alternating with milk - beginning and ending with flour mixture; Mix at low speed - add vanilla. Pour into a greased and floured 10-inch tube pan. Bake at 350 for about 1 hr and 15-25 minutes or until tester comes out clean. Cool in pan on wire rack 10-15 minutes, remove from pan and cool completely on wire rack.
Frosting - Beat powdered sugar, peanut butter, butter and salt at low speed til well blended; Add 1/4 cup evaporated milk and beat until smooth; ( I used the whole can of evaporated milk to make it "drizzable") Drizzle over cake!
