I think by now you guys all know how much I enjoy making bars. I make a batch pretty much every week for Josh and I to eat as a quick breakfast or a tasty snack. Recently, I stumbled across the Non-Dairy Queen’s recipe for Peanut Butter Honey Cereal Bars. I knew I must give them a go, but I made a few adjustments.
Ingredients:
- 1/3 cup honey
- 1/3 cup natural, unsalted AB (or whatever AB you have on hand- I used TJs raw, unsalted AB)
- 1/2 tablespoon ground flax
- 2 1/2 cups cereal (I used Special K and Cascadian Farm Honey Nut O’s)
- 1/2 cup mixed seeds or nuts (I used raw sunflower seeds and pumpkin seeds)
Directions:
Pre-heat oven to 350 degrees F.
Spray a 1/3 cup sized measuring cup with non-stick spray. Measure out honey and place in a microwave safe bowl. Microwave on high for 1 minute. Add AB and flax and mix well. Mix in cereal and seeds/nuts.
Heavily spray a smaller baking dish with cooking spray (I used a pyrex dish). Using wax or parchment paper, press mixture into the body of the pan. Bake for 20 minutes. Allow mixture to cool completely (I placed mine in the refrigerator for a while as well). Cut into bars. Enjoy! I kept our individually wrapped bars in the fridge to help them hold their shape.
