Prior to leaving, I did get a chance to try a new recipe, Julie's Cauliflower Pizza Crust. I saw Em make it and couldn't wait to give it a go. I followed Julie's recipe (for the most part) but used 1/4 cup egg beaters (instead of an egg) and 3/4 cup part skim mozzarella cheese (vs. 1 cup). Raw cauliflower:

HAPPY MOTHER'S DAY to all the Mama's out there (especially my Mom and MIL!). Excuse my absence! Josh got sick Thursday and then we took a quick trip up to our old stomping grounds (Penn State) to watch Josh's brother graduate from his MBA program.
