To the guy driving the huge cement truck on the highway on Monday:
Why must you drive in the left lane during my entire drive on the highway from work back home?
It is 5:00 pm, and I am tired. I worked on Sunday – I am not a happy camper. All I want to do is get home to my dogs.
Yet, you continue to drive in the left lane uphill going 45 MPH in a 65 MPH zone…Why must you do that? And, no I will not pass you - out of principle.
This is my lane when I’m driving home dangit, it is the fast lane, and although I am wearing my Om symbol on my wrist since it helps me stay calm, I have had a hell of a week already…and I won’t lie, I’m going to follow behind you cussing you under my breath and shaking my head and then give you a mean look when I finally get past you. Sorry, it’s just one of those weeks bro.
I will now go back in my mind to Saturday at Red’s in Mt. Pleasant where the hubs and I had oysters outside – what a b-e-a-utiful day!
And now I will go to something that makes me super duper excited – desserts!
I needed something sweet but fairly healthy the other day – so of course I did a quick browse through miss Lea’s blog and found the perfect thing – she calls hers POM, chocolate, and nut oaties, which she adapted from Heather’s maple nut oaties. I decided to just call mine peanut butter chocolate chip oaties.
Why? because that’s just what I had at the house =) You can do pretty much anything with these little guys. For mine, I incorporated peanut butter, dried cranberries, chocolate chips, maple syrup, and applesauce. So good and awesome to have around the house as a snack!
Oh, and this pineapple with a twist? Super easy and incredible if you like pineapple and tropical flavors.
This recipe is basically putting a cut up fresh pineapple in a slow cooker and adding some cinnamon, ginger, and brown sugar. So different and just amazing paired with ice cream! Our favorite? Haagen-Dazs pineapple coconut…Oh man…
