Christy Jordan’s Corn Chowder

I love cookbooks… I REALLY love cookbooks filled with stories, tasty recipes, and beautiful pictures. Christy Jordan’s Southern Plate contains all of this and so much more (disclaimer: I received this cookbook for free from the publisher).  When I first got this cookbook in my mailbox, I couldn’t put it down. The book is divided by season and I must have book marked 5 recipes on my first look through (since then I’ve book marked probably 10 more).

The first recipe I decided to make is Christy’s corn chowder. I used vegetable broth (as she suggested) to make it vegetarian.

The recipe was easy to follow and thickened up quite beautifully. I added some frozen peas to the mix too. The outcome (not quite as beautiful as her picture ;)):

I enjoyed it as is with some footballs (see below) and fruit on the side. Josh had his friend Jeremy over for football Sunday. They enjoyed theirs with Tostitos footballs:

…cheese, and Jennie O’s spicy turkey sausage:

Josh & Jeremy could not stop raving about how delicious this was!!! I can’t wait to attack more of the recipes in this book.

Hope you have a wonderful Monday! Do you have the day off? I had to teach Pump this morning and have to work a bit. I’m also hoping to go for a nice walk or run with Josh. Enjoy your day!
