Breakfast Potatoes & Erewhon

Happy Friday! Friday doesn’t feel quite the same when you’re on maternity leave. However, I am still excited about it because it means I get lots of time with Josh. This has been a great week. Again- feeling more settled in my role as a Mom.

Speaking of Moms, my wonderful Mama came down yesterday to watch the peanut while I ran to the food store and got a massage. The hospital I delivered at gives out congrats/thank you gifts in the form of either a massage & aromatherapy scalp treatment or a terrycloth robe. I went for the massage and treatment and loved every minute of it! The Mom Spa rocks! And a big thank you to both my Mom and Josh’s Mom who have made us dinners and babysat a TON- they are amazing!

For dinner last night, we had breakfast potatoes. I’ve posted about these before, but I love how easy and tasty this meal is! Plus, you can adjust it and add in anything you like (bacon, sausage, veggies, etc). Josh had a white potato topped with eggs and cheese:

And I had a sweet potato with eggs, tomato, and ketchup. We both had fruit on the side:

Recently, the nice people at Attune Foods sent me Erewhon cereal to sample (disclaimer: I received these products for free but the opinions are my own!!). I got both the Cocoa Crispy Brown Rice cereal and the Crispy Brown Rice with Mixed Berries.

I sampled the cocoa crispy cereal with almond milk and Josh tried it with cows milk. We both really enjoyed it! Nice and chocolaty, without feeling heavy/sugary.

I LOVE the crispy brown rice with mixed berries!! It reminds me of a lighter captain crunch with crunch berries!! I made a few fruit/yogurt/cereal bowls with the cereal:

And last, a big thank you to Janetha for the awesome package! She sent me a bundle of things, but I wanted to highlight my favorites! Nike socks? SO cute. Granola? Love! And the cup??? PERFECT! Thank you thank you!
