Pecan Praline Crunch Snack Mix


This is a great recipe! I got this from a dear sweet family member that we lost several years back. She married my cousin Johnny. Mellie was an amazing cook. We always knew that at any family gathering Mellie was going to bring THE best food. This is just one of a few. I will share more later!



Pecan Praline Crunch

1 12 oz box corn or rice chex - I use Crispix
2 cups pecan halves
1/2 cup packed brown sugar
1/2 cup light corn syrup
1/4 cup butter
1/2 tsp baking soda
2 tsp. vanilla

Mix cereal and pecans in large bowl. Combine sugr, syrup and butter in small, heavy saucepan and bring to a boil stirring constantly. Remove from heat and stir in soda and vanilla. Pour over cereal stirring til coated. Pour into single layer onto 2 cookie sheets. Bake at 250 for one hour stirring every 20 minutes. Cool on wax paper. Store in airtight container!


I found this version on the inside of a Land o' Lakes butter box. I make this one often too. Both are yummy - just a little different!

Crunchy Sweet Snack Mix

9 cups crunchy corn/rice cereal (I used Crispix)
1 cup firmly packed brown sugar
1 stick butter
¼ cup light corn syrup
¼ tsp baking soda
1 cup peanuts or pecans or M &M’s (or could do both)

Heat oven to 250. Spray large jelly roll pan with sides with Pam. Place cereal in pan. Combine brown sugar, butter and syrup in 2 qt saucepan. Cook over med-high heat until mixture comes to a boil – usually 2-3 minutes. Continue cooking - stirring constantly for 1 minute. Remove from heat and add baking soda – mix well.

Pour syrup mixture over cereal; stir gently until well coated. Bake for 20 minutes then stir; continue baking for 20 more minutes.

Spread mixture onto waxed paper - add any nuts and toss; add M & M’s… continue to let cool. (I have also cooked a cup of pecans with the cereal mixture). Break mixture into pieces. Store in loosely covered container.
