Greek Style & Workout Wednesday

How is your week? Mine has been the usual hectic-ness- but I’ve been enjoying every minute :) I was really excited to see the Athenos Challenge that has been going on around blog world. P1090266

Athenos feta is one of my favorite brands and I am a HUGE fan of Greek style salads. With the weather getting hotter and hotter in SC, cooler dinners have become more appealing. On Monday, I made up a ginormous Greek salad with spinach, romaine, sun dried tomatoes, artichokes and feta. I later also topped the salad with some hummus (mmm):

On the side, I had a chunk of my homemade focaccia bread.

The focaccia was supposed to be for a blogger meet up we were going to have on Monday night, but due to various circumstances, we had to reschedule. Guess Josh and I will have to eat all the focaccia ourselves, bummer ;). I also had a big bowl of melon:

Josh had a big salad too, but minus the feta,sundried tomatoes and hummus + shrimp. I also made a grilled artichoke and cheese sandwich for him using the focaccia:

How are your workouts coming along this week? My schedule is looking as follows:

  • Monday: Ran to warm up, Taught Body Pump
  • Tuesday: Taught Body Attack
  • Wednesday: Off
  • Thursday: Teach 45 minute Body Step, 45 minute Body Pump, Body Step launch practice
  • Friday:  Teach Body Attack
  • Saturday:  Teach Body Step & Pump
  • Sunday: Off

This week is a little heavy, so I plan to be super lazy on my off days ;). Do you have any group fitness questions? Keep them coming! I have the Group Fitness post in the works. Enjoy the rest of your work/school week.
