How is your week? Mine has been the usual hectic-ness- but I’ve been enjoying every minute :) I was really excited to see the Athenos Challenge that has been going on around blog world.
Athenos feta is one of my favorite brands and I am a HUGE fan of Greek style salads. With the weather getting hotter and hotter in SC, cooler dinners have become more appealing. On Monday, I made up a ginormous Greek salad with spinach, romaine, sun dried tomatoes, artichokes and feta. I later also topped the salad with some hummus (mmm):
On the side, I had a chunk of my homemade focaccia bread.
The focaccia was supposed to be for a blogger meet up we were going to have on Monday night, but due to various circumstances, we had to reschedule. Guess Josh and I will have to eat all the focaccia ourselves, bummer ;). I also had a big bowl of melon:
Josh had a big salad too, but minus the feta, sundried tomatoes and hummus + shrimp. I also made a grilled artichoke and cheese sandwich for him using the focaccia:
